White wine sauce with lemon from 'Nice' in France.

John Dory (Saint Pierre/Peter's Fish cooked in foamy butter, olive oil, thyme, shallots, citrus). White wine sauce with lemons from Nice (similar to Meyers Lemons in the US). Persillade (parsley, garlic). Fish fumet with lemon juice. Dots of olive oil. Salad leaves for decoration.
