So...I put on my 42t sprocket on my 16" rear wheel. At my weight (215lbs) I can go up to 40mph solid. I still get enough torque to pull a wheelie, but you have to pull harder to get that wheel up. If I was lighter, I think I could hit 45 mph. Anyways, now I'm thinking of getting a 42t for my 19" wheelset that's stored and trying that. I'll keep you posted. Keep up the cool Sur Ron vids.
