I better understand the wind direction deflection in by thinking about the earth's rotation speed. The surface speed is fastest at the equator, dropping to zero at the poles. So air heading towards the equator encounters faster and faster earth surface speed, so the wind heads east. Same thing for the prevailing westerlies: The air heading in the direction of the poles has a faster west-to-east velocity component than the surface speed to travels across, so it that air is moving faster from west-to-east than the surface. Good video.
