thanks a lot sir,, aapne video bahut dhayan se dekha hai.... let me explain you ..video mein maine bataya hai agar citric acid ko lemon juice se change karna hai to uska formula ya ratio kya hai....aur jo recipe ke liye matra (amount) chaiye wo written hai.. means wo bole gaye fotmula ke hisaab se uski 1/2 hai..

Hi Rituji, like you said that ratio of water to sugar is 1:3, what is the ratio of citric acid/tartar to syrup? So that I can change the measurements for a bigger batch. Thanks in advance.

In my recipe I used 1 cup sugar,1/3 cup water,1/4 tsp citric acid/cream of tartar....you can multiply the ingredient as per your need.

Hello Mrs Ritoe, I have tried to make the glucose syrope. At room temperature its basically solid. It does not move. Did i evaporate to much of the water? Can I fix it by adding a few tablespoons of water? Thank you!

Hi ritu.... your videos are really informative... i tried making glucose syrup. But i guess i overboiled the syrup. It hasn't crystallized but it has become thick but pliable. Can i still use it for making fondant. If not how can i correct it?? Pls reply

Hii mam.. very nice recipe. But i dont have that candy thermometer. So when should i check for soft ball stage? That one thing i want to ask n another is how much glucose syrup will be made out of this recipe. Like in my fondant recipe i require 1/4 cup that is 50 ml of glucose syrup so can i get this much quantity or more of glucose syrup with this recipe?? Please suggest. Thank you

the amount I used in my recipe will be around 1 cup ready glucose syrup . And when while boiling dense foam/bubbles forms at the top of the pan that will be right time to check the soft ball consistency.
