This is a gluten-free and vegan side dish made with pumpkin and small red beans. It's called Erissery. It can be eaten over rice.
Ingredients:
1 1/2 c pumpkin
3 c water
1/2 tsp turmeric powder
1 tsp salt or to taste
1 big onion, diced
Combine all the above ingredients in a pot, cover and cook on medium high til pumpkin is tender. Stir and check while it's cooking,
While the pumpkin is cooking, cook 1 c red chori(small red beans) with salt and set aside.
Coconut paste:
1 c grated coconut
3 or more green chilis to taste(can use red chilis if you want the curry to be red)
1 tsp cumin seeds
5-7 cloves garlic
1 small piece ginger
Combine above ingredients in a mixie or blender and make a paste. Add water as needed while mixing.
Once the pumpkin is cooked, add the coconut paste and red beans. Mix and set aside.
Garnish:
2 tbs grated coconut
1 tbs oil
1 tsp mustard seeds
2 stems curry leaf
3-4 kashmiri chili
Toast coconut in a pan until it's brown. Remove from pan and set aside. In the same pan add mustard seeds, curry leaves, kashmiri chili, and the toasted coconut. Combine and add to the pumpkin mix. Stir to combine well and enjoy!
