INGREDIENTS FOR 2 SERVINGS:
40g dairy-free yogurt
200g floury potatoes, boiled and peeled
80g potato starch
15g dairy-free butter
10 sage leaves, torn
black pepper
salt
STEPS
Mix the yogurt with a pinch of salt and pepper.
Press the potatoes through a potato ricer, add them to the yogurt mixture, and stir to combine.
Add the starch and work the ingredients together to create a dough. Form a ball with your hands, and let it rest for 20 min.
Cut a 40 grams piece of dough from the ball, roll it by hand to form a sausage, and cut it into gnocchi. Keep the gnocchi separated on a piece of greaseproof paper ready to be cooked.
For the sauce, melt the butter, gently fry the sage in it, and add a little salt and pepper.
Cook the gnocchi for 1 minute or until they rise to the surface, drain them, combine them with the condiment in the pan - and a little water from the pot if necessary - and stir well.
Add dairy-free cheese to taste, serve, and enjoy.
SUBSTITUTIONS and TIPS
The gnocchi can be made with a variety of different flours and starches, but superfine ones work much better. Our favourite choices are potato starch - for easy-to-handle and slightly chewy gnocchi - and fine rice flour, for gnocchi that are a little sticky to the touch, but with no chewiness whatsoever. The fine rice flour we use is the kind that can be found in Asian supermarkets.
The gnocchi dough can be kept in the fridge for 2 days, wrapped in cling film. To make it easier to handle after it has been in the fridge, take it out 1 hour in advance and work it by hand for about a minute before making the gnocchi, to bring the dough back to its original consistency and elasticity.

LOVE this new style of filming your videos! SO relaxing and beautiful, well thought out shots and editing! The music you chose is also a great choice! I feel like you've captured the more "traditional" side of cooking from scratch and that theme is rarely used online (usually voiceovers and ingredients lists are seen, many use them and they're good too). But I didn't know I wanted to see this style of video until you guys made it! Honestly hats off! 👏❤️

recently went GF and low fod and I've been missing pasta-like meals so much. this was a fantastic recipe. my wife on a whim decided to add goat cheese once we plated and it took this recipe to the moon.

As an italian, I must say I am very impressed with it! It looks very yummy! Only a true Italian would have that potato masher in the kitchen haha! I would also fry a little bit of thyme in the oil and add some lemon zest to make the flavour fresher (if that makes any sense lol)

I tried this recipe and it's too good to be true 😍 I added one clove of garlic to the dough and next time I'll substitute the sage for thyme and rosemary but there will definitely be a next time :D

sage and butter is such a classic combo! i remember mom used to make cheese ravioli and for toppings she and i always had that ;-; i've avoided recreating old stuff i used to eat for fear of not being able to recreate them properly but i'd love to give this a try

Just watched my first video from this channel and was incredibly impressed. Fantastic cinematography! Just wish the presentation, ingredients, and instruction were all present in the video. If I come to this channel again, I'm simply going to look at the ingredients and recipe instructions rather than watch the video, not because the video is of poor quality, but because I would watch this video for the purpose of obtaining the recipe, not watching a short film. Overall, great stuff; I just wish everything I needed was combined into one platform, i.e the video.

I like that the "flour" used is potato. Double potato dose. Have you tried this without the yougurt? I have always made gnocchi with only the right kind of potatoes (bintje for example) and flour, like my nonna from Avellino taught me. Thanks!

Your nonna is 100% correct, and the regular recipe calls for no yogurt. We actually have a recipe on that as well. However, the gluten-free version requires some sort cream cheese to get an even better consistency, so in this case we opted for yogurt. Tofu works well too, but yogurt is best. Thanks for watching

@@Ari_C DAIRY cheese is a dairy product. Cheese isn't necessarily. There are a lot of non-dairy cheeses. Just because something wasnt invented at the dawn of cheese it doesn't mean it isn't "real". Or else almost no modern cheese is "real" because it isn't exactly the same as the first cheese made.

Hi! Sorry to hear about your struggle, it happens with this kind of recipes as getting the exact ingredients needed is even more important when no gluten is used. Adding more starch won't fix the stickiness problem, as starch doesn't absorb moisture until it's heated. You are either using the wrong kind of starch, or more likely, you are using potatoes that are not meant to be used in recipes like this. This is a common problem, as one variety or the other will make all the difference. My question is, are you using floury potatoes (the ones for backing and for fried chips to be clear) and not waxy ones? Flory potatoes will generate little to no stickiness, so the amount of starch that the recipe calls for will suffice.
