I’m a new subscriber, thanks for sharing your recipe and knowledge about gluten free bread baking. That smaller loaf would be perfect to make a couple of small loaves for turning into bread bowls for soup or stew.

What can I use other than sugar..or any sweetener that spikes blood sugar? Allulose? Erythritol? Stevia? Sucralose? Can't use honey..Can't use sugar. Will it work with substitutes?

I love that your loaves are small. For just 2 people, it's great to have fresh bread every couple of days. Can you freeze the bread after it's baked and cooled?

Yes, you can freeze once it's completely cool. I'd slice then freeze it.

I’m not sure why it is that it needs to be kneaded when there’s no gluten in there? Can you explain that? I never knead my bread and it comes out great!

No I haven't tried millet. I make my own flour mix for this one, you want an all purpose flour mix, most work well here.

Thanks for this. I tried other programs but the size of the bread makes sense for a beginner. My first loaves were horrible. I like that you don't have a ton of steps, and that you do not have too many fancy pans. Good for a starter. Some people pull and fold their bread for bigger holes. Going to try the Xanthan gum. Thanks.

Yes you can but I’d watch the bake time. Check on it often as to not burn.

I’m a newby very confused so I started my starter but when do you put the lid on it because I only have a paper towel covering it like you showed in the other video. It’s been about 6 days doesn’t look very active i can’t feed it twice because I forget in a hurry most mornings I did feed it twice over the weekend.

When you’re starting it you must feed it daily. If you forget you need to discard half and feed it twice a day until it’s nice and active. If you can’t feed it or just made bread, feed it and keep it in the fridge.

For the first 15 mins bake at 500 then turn it down to 450 for 40 minutes

I like this video but you could use the recipe in the description because it's not easy to pause and play a video to make a recipe.... so I almost forgot the second part of cooking it in the oven at a lower temperature... first batch not so good. Hopefully second batch is
