I just made these cookies following the recipe 100% and I cannot describe how good they are using human language. The spiciness is really kind of tertiary to the rest of the flavors - the gochujang is sweet, salty, umami, a little sour/fermented, and that makes for amazing caramel flavor. the spice/chili flake flavor just kinda like... fills in the gaps.

As a Korean at first I was freaked out because I've never thought about using gochujang for desserts...and then after watching this video I realized this idea certainly makes sense because sweets and spices together never go wrong🤔

the other day I put a little gochujang on a girl scouts dulce de leche owl and sprinkled it with ginger sea salt. it was my favorite treat ever.

I made these the day the recipe came out - they were SO good. I will definitely make these over and over again The gochujang taste really works. It just gives things a small kick but it doesn't overpower. And they're sooooo chewy

These cookies look stunning! I agree with Eric that gochujang is sometimes too sweet, but it's perfect for a cookie. Also, the story about his mom bringing out Grandma's gochujang for his dad was just lovely.

I learned this trick for quick room temp butter from emmymade here on KZbin: flatten the cold butter into a thin layer with a rolling pin, or squishing it with your hand over the butter paper, and leave it at room temp. It’ll soften in 10-15 minutes!

I want to try the gochujang swirl technique but with an almond cookie recipe as a base. A peanut butter cookie base would work well too, but I think having a more simplistic base is better for bringing out the caramel tones. This is a fantastic idea and I can't wait to experiment with it myself!

I have never heard of gochujang before this recipe but I was going through my condiments and realized I unknowingly use gochujang all the time. I have Mother In Law’s fermented chile paste concentrate and I only noticed yesterday the back says “our signature gochujang”. So I just tried these today and didn’t even have to go to the store, so easy and delicious, will definitely be a cookie for the end of the year/beginning of the new year! Thanks for sharing.

I made this recipe last night *chef's kiss* it's really good. I was shocked that you could use gochujang in a cookie 🤯 the texture of the cookie itself is amazing. Crisp edges and chewy center. Absolute perfection. The taste is sweet with a touch of heat. Love it!!

These sound so fun! And now I totally want to add really dark chocolate to a half batch of these and see how the flavors pop! (They sound amazing as they are, I just love that kind of spicy-chocolate contrast.)

I tried a couple of cookies with dark chocolate added. They were deeply satisfying. If you go that route, I recommend the super-dark vaguely sweet chocolate. There's enough sugar in the cookie to carry it just fine.

Just made these and wow! Snickerdoodle meets a mild warmth of spice. Sorta an intensified cinnamon taste. So good!

Wow! Thank you Eric! The cookies came out perfectly and my Korean American kids (6 & 8 yo) who won't even eat kimchee, gleefully chomped these down. I also did the gochujang swirl after chilling for 5-7 minutes and then chilled some more.

My partner made these for a holiday party and I was skeptical (when I think of the flavor of gochujang I always team it with garlic - and it was hard to separate that intellectually taste wise). But the result is a rich caramel that has a subtle heat akin to a warming spice. Also they look like thin pretty planets with like that Mars red swirl! Try them, its a very solid cookie!

Printed up this recipe which says 1 teaspoon of vanilla but on this video it looks like Eric is using a TABLESPOON? Had one at a party and am making as they are INCREDIBLE!! the spiciness level is very subtle but perfect!

Eric did a great job with this recipe. These were a big hit. The cookie he came up with without the gochujang is amazing. he didn’t just add it to some eh cookie. Also I didn’t feel like baking directly after making the dough so I formed the dough into a tube shape, wrapped it in waxed paper and refrigerated it for later. I sliced off pieces as I wanted to bake them. Worked great.

I have made these a few times and they are jut so,delicious and unique! I have a friend coming next week who is GF so we will make these with KA 1:1 gluten free flour. I cannot wait!

Have just made these today for the first time, after having the video saved to my "to make" list for awhile. I haven't sampled one at yet (self- control much 😉) but I already know I'm going to love them based on the cookie batter taste and the baking smells in my house right now 😂.

Are there other examples of gochujang used in desserts? In my three years living in Korea and often visiting bakeries, I don't remember ever seeing a gochujang cookie. This idea really caught my eye

dark chocolate icecream with gochujang jelly, gochujang creme Brulee, gochujang caramel french toast, crispy gochujang macadamia wafer cookie, gochujang chicken & waffles, etc. I heard of gochujang tiramisu but never tried though. Just like miso, there are doenjang dessert out there as well. there are many new age desserts with traditional Korean ingredients out there. You should try.

@@kakuella What a list! A crispy gochujang macadamia wafer cookie sounds especially good. I mostly went to traditional bakeries (or Paris Baguette) and it was seven-ten years ago. Probably why I never came across new age desserts like these. Wow. Thank you. I can definitely see the appeal of that gochujang sweet kick in a dessert, but doenjang...? I'll need some convincing of that lol Appreciate the feedback! 😊

I just made these cookies. I do love the flavor, however I didn't get the thinner, crackling and as chewy cookie as Eric is showing.

I made them twice and had the same issue. Dough wasn't soft/wet enough to need to be chilled, didn't spread much on the pan. Still turned out delicious. I thought I might have not let the butter soften enough the first time, let it sit out over night, didn't help at all unfortunately.
