Most of the time you parried, but why Alfheim enchantment set, which says last-second dodge gives strength. Does parrying considered as dodges???

No, parries do not count as dodges. The reason he has alfheim’s perks is because every enchantment also gives you stat buffs, if you look at the top of the description of the enchantment, it shows what stats it buffs. He didn’t choose it because of the last second dodges (although he probably did) but he chose them for the strength they give

It’s not an enchantment, it’s actually the ares armor set that gives you this perk. I believe it is the cuirass

Just gotta play through the Valhalla DLC to unlock it. I think you have to finish the whole thing but I’m not sure. After that you can just collect it in the lost items at any of Brock’s shops
