@@S0n0fG0D he's not defying death. Kratos simply believes in fighting until he's exhausted all options. By the time of GoW Ragnarok, he's willing to accept help from others and values his companions. Him saying death may take him when it earns him is, in it's own way, him accepting that he will inevitably die, even as a god. He just no longer wishes for death. It's reflected in his story to Atreus about the man who cut wood for his village near the end of the game.

Santa Monica heavily changed Loki's character before the release. The prep arc of Ragnarök would have been far longer, more elaborate and Surtr would have died trying to become Ragnarök without Sinmara. You'd then have to find Sinmara and Atreus would have manipulated and sweet talked her into becoming Ragnarök after lying about Surtr's death, claiming it to have been Odin who caused Surtr's death and not Kratos and Atreus. There would have been an entire epilogue quest of searching and reaquiring the hearts of Surtr and Sinmara to lay them to rest together. Note that this Atreus did not care at all that he lied and caused deaths and the disturbance of innocent people. Release Heimdallr would had been right about Atreus if Santa Monica didn't change him.
