Goda Masala Recipe
Goda masala is a flavorful spice blend originating from Maharashtra, India. It's a key ingredient in many Maharashtrian dishes. Here's a recipe for making goda masala at home:
Ingredients:
1/2 cup grated dried coconut
1 teaspoon caraway seeds (shahi jeera)
1 teaspoon cumin seeds (jeera)
2 teaspoons oil
1/2 cup coriander seeds
2 tablespoons white sesame seeds
2 tablespoons niger seeds (karale til)
2-3 tablespoons poppy seeds (khuskhus)
1 stone flower (dagad phool)
2 dried red chillies
1/2 inch dried turmeric, broken
6 cloves
6 green cardamoms
1/2 inch cinnamon stick
1 bay leaf
Instructions:
Dry Roast the First Batch: In a non-stick pan, dry-roast the dried coconut, caraway seeds, and cumin seeds on low heat until golden brown and fragrant. Transfer them to a bowl and let them cool.
Dry Roast the Second Batch: Heat 1 teaspoon of oil in the same pan. Add coriander seeds, white sesame seeds, and niger seeds. Roast them on low heat until golden brown and fragrant. Add them to the bowl with the cooled first batch.
Roast the Third Batch: Heat the remaining oil in the pan. Add poppy seeds, stone flower, dried red chillies, dried turmeric, cloves, green cardamoms, cinnamon stick, and bay leaf. Sauté on low heat until golden brown and fragrant. Transfer them to the bowl with the other roasted ingredients.
Grind the Masala: Once all the ingredients are cool, grind them into a fine powder using a spice grinder.
Store: Store the goda masala in an airtight container. It will stay fresh for several months.
Tips:
You can adjust the amount of dried red chillies depending on your spice preference.
If you don't have stone flower (dagad phool), you can omit it.
You can find most of the ingredients at Indian grocery stores.
