The Hadith have a standard method/process it goes through which Muslims use to categorize their authenticity from weak to very strong. You can get how these methods are applied with a simple Google search. I hope this helps.

Muslims don't take collections of Hadith as one whole source. Each Hadith is tested individually so you can't say that because one is untrustworthy then all of them are untrustworthy. It's a logical fallacy to say so. Muslims admit and are honest about the fact that there are untrustworthy Hadith. It doesn't put every single Hadith that's known to be trustworthy into question though. The Bible, however, is taken wholely by Christians as the verbatim word of God. So there's a big difference and the same logic does not apply to Hadith and the Bible.
