SSB is all about extreme ki control, so Goku can use blue to actually lower his ki even further below his non god forms. The added benefit is that krillin can't sense him doing this, and even though krillin does know goku is holding back a tremendous amount, he can't sense it. All he can sense is the immense pressure blue gives off, which gives krillin the feeling of fighting a god level fighter. This is where some people don't like how krillin can fight against blue, because they only see each form as a higher level of power on a linear scale, rather than what each form actually is and what goku is able to achieve with each form. The normal ssj forms are all set multipliers from base form, and while each of those forms can be controlled to lower their ki or raise it to the max, they can't be lowered below a minimum amount before goku reverts to the previous form. With god ki, especially blue, there is a multiplier, but the insane ki control needed in order to achieve the forms allows goku and vegeta to control their ki entirely, and consequently they can lower it as much as they want, and then raise it all the way to max. Also, the god forms have some form of self-healing, but it seems to be a conscious healing or a reactive healing based on specific situations, but the og god form, with red hair, seems to have the best god like traits, in the form of healing and sustainability. But i digress. The overall point is that blue is extremely useful for fighting both really strong opponents but also training much weaker opponents because of its insane ki control and overwhelming pressure when in its presence.

The thing is with super Saiyan blue he can adjust his power very finely so he doesn't accidentally kill people whereas the regular super Saiyan forms prevent him from holding back enough. Even though he's in blue he's using far less power than his base forms maximum power.

Definitely watch OG dragon ball. It's got much more humour and it doesn't take itself too seriously in the beginning but if you stick with it, you will enjoy it for sure!
