He might have done all the research, and taught you and many others on the job, but he didn’t teach it in THIS vid. The only think he taught was to start the cooking in hot water instead of cold. What about the rest? I want to know how you can get them to the right doneness (overcooking makes a green yolk ring- so how long to boil?) And how do you peel, say, a dozen eggs, not just 1-2, without the shells getting difficult to peel without damaging the cosmetics of the egg if you are making something like halved eggs for a Cobb salad or for deviled eggs? He left out the important stuff.

I agree with Jack and have said it before. I love to watch Kenji for his recipes, but I also watch for the relaxation. I appreciate his knowledge and the way he teaches not only the recipes but the utensils he uses and why. I also wanted to point out that I like the painted toenails today Kenji. This might be extra, but I’ve found I really enjoy scooping out the yolks and making sort of a dressing with them, Mayo, mustard and some gojuchang, and mixing the hell out of it. I then chop the whites and whatever mix ins and gently mix them with the dressing. Seems like it creates a little bit more of a textual contrast. It’s egg salad tho so it’s always going to be good!

I was as surprised that you mixed the egg salad with your hand as I was when you smooshed the mushrooms for soup with your hand! Kenji, I can't tell you how happy I am about your hard-boiled egg method. Seriously life-changing for me! I've actually won bets with 30 year professional chefs about what is the superior method to boil an egg that peels easily. Your "start in boiling water and then immediately into an ice bath" wins every time. It even works well with the freshest eggs that you can get, not from the grocery store, fresh laid from people who keep chickens, or as we call them in Louisiana, "yard eggs". Thanks for everything you do my friend!

boil your eggs/I use 8 eggs cool down & peel ( I like to put my eggs in freezer 5 minutes) no longer now mix real mayo / sweet green relish chopped fresh dill and very finely chopped garlic (2 small cloves) or to taste chop green onion (save that for last) mix all other ingredients in bowl take your eggs and using a egg slicer / slice once turn 180 degrees slice. 2 at a time now in a separate bowl add a bit of your mayo mix stir gently with fork Repeat, this way you have control over how soggy or firm you you like your egg salad (I like mine firm) you want to taste the eggs now into the fridge 1/2 hour to bind the Flavors together take your (Egg Salad Creation) add a bit of sliced green onion/ salt & pepper to taste) Remember 🤔STIR/MIX GENTLY

This is my favorite egg salad recipe. I use Japanese yuzu flavored kewpie and I can’t go back to using regular kewpie. Also, instead of using my hands, I pass the eggs through a cooling rack. I recommend this method if you don’t want to get your hands dirty! Thanks for the recipe! I never get tired of it.

To put it simply yeah. But to be fair there are some people that swear by methods such as salting water, freezing your eggs, starting from cold water, sacrificing a virgin to baphomet. You know, totally normal boiled egg things.

It's a little bit more detailed than that, he explains it more thoroughly in his video dedicated to the technique. Yes it's just boiling them, but also he starts out with hot water and rather than doing a deep boil like most of us at home probably are used to doing he seems to do a boil/steam which he says hardens the whites before they fuse to the shell, something that happens frequently if you start with cold water. So it's a bit more nuanced than it might seem, even if only slightly.

I have been cooking my eggs in my bamboo steamer and that works pretty well for peeling. I keep a small spoon handy for the occasional stubborn one that wants to divot. Nice egg salad. I like using an egg slicer two ways for neater cuts. Never did the olive oil. Will try that.

This is only for a hard boiled eggs because you need them little warm or cold for the salad: this method always works even when start with a cold water, bring them to boil, etc., etc. After they done, put under the cold running water, or fill the pot with cold water, or ice water bath, doesn’t matter. The point is, they’re SO EASY to PEEL after. The shell basically comes off by itself! 50 years of experience. 😁 love you channel, love all your recipes more then nobody else’s, so much love and respect for you, Kenji!🙏🥰

Hey Kenji, This looks amazing. It reminds me of the egg sandwich my dad used to make. But except for mayo and cleary, He added boiled potatoes. So it's basically boiled potatoes, boiled eggs, salt & pepper mashed and all that on a buttered bread. Simple recipe, give it a try.

My preferred method (from making egg salad for the cafeteria in college) is to push the eggs through a grid-style (as opposed to grill-grate) cooling/baking rack. Yes, the kind you’d put on a sheet pan. Just use your palm and push the egg down, clean that one off with the next. Perfect diced egg every time

I'm not sure if you meant to put this lesson out there. But the whole, "if my friend offered me an egg salad with pickled relish in it.... I would say thank you yes I would like to have some of ur salad." It shows that even if it's not ur way of having something, you should always be respectful and thankful for ur friend making u a egg salad even if it's may be a simple thing to make. It's always a good reminder to check urself and show others thanks for there kindness. Kenji teaches us how to cook, provides entertainment, and gives us some good life lessons.

I'm a big fan of simple curried egg sandwich of just boiled egg(s), mayo, curry powder and salt. Served with lettuce in the sandwich. Have started adding diced red onion and wow massive difference! I will definitely be inspired by this video

I use a pot with a steam basket on it starting at a boil, and steam for 10 to 12 mins. They peal great because they are steam boiled.

Cooking the eggs in a pressure cooker also works well, especially if you’re doing a lot of them. Easy to get them how you want them and always easy to peel.

As a home cook it's always the simple recipes that I'm most curious about I'm one of those that likes to chop up bread n butter pickles in my egg salad I enjoy the sweetness but I'm excited to try your trick for boiling the eggs before I only used the hot water start for soft boiled eggs so now I'm going to try your method THANK YOU 😁
