You're rolling too early on your tacks. Ideally you roll just over a second after the jib backwinds

Yep! Though I would argue that "just over a second" may be too general. In lighter wind that may be true, but in heavy wind waiting over a second once the jib backwinds is too slow. That being said, it is generally better to wait longer than jump the gun and roll early: rolling early kills your turning speed.

How did you put the gopro mount on the boom ?

I put the sticker attack at the end of the boom and I fixed its with a screw.
