actually his wine's taste is not uncommon among those wine-makers who don't have the support of major Cantine and don't have prestigious grapes in their vineyard. It's much stronger, acidic and has not many recognizable notes. It's natural but not something you can sell (other than maybe your friends and family)

True. I worked at a winemaker which made among more prestigious wines a line called lit. “with lees” as a tribute to old times. Basically the yeast eats out all the sugar content in the bottle and it makes it more acidic and quite monotonous taste wise.
