There are two videos prior to this that provide the context for his "North eastern" approach, in one he visits a north eastern village where he learns about the bamboo chute and in another he enters a cooking competition where the winning recipe used papaya with chicken (Gordon came 2nd or 3rd). That north eastern flavor was less known even in the neighboring West Bengal and that's why he decided to "challenge" Kolkata's street chefs to not only introduce the north eastern flavor to the people but to learn about the variety of food himself. The vibe I got from Kristen and Andrew was Gordon beat Indians at their own game by cooking something from his own knowledge which is completely unprecedented. I have watched Gordon for 10+ years and while it's true he's a Michelin star chef, when it's comes to Indian food, he's a fledgling.

I think Gordon has mellowed over the years ngl I remember being deathly afraid of ‘Hell’s Kitchen’ and then ‘Kitchen Nightmares’ gave me nervous giggles.
