As far as I know Chile Piquín is from Tabasco, México. Anyway, is amazing the respect for the ancient cultures to still using the metate to make the masa.

Yup it is. Living Houston Texas i don't see it sold here. I grow some in my backyard for when I need them. It really doesn't represent Texas in my opinion.

Interesting. I always felt the pequin pepper to me more Mexican than Texan. I've seen it used in Mexican food way more and sold more commonly there as well. Heck, I think I've heard somewhere people say that it's the pepper of the city of Monterrey in Mexico in another food video. I personally haven't seen it sold in Houston and that's why I have some growing in my backyard for when I need it!

I mean, Texas used to be Mexico, and my family has been in Texas for generations, even before the Europeans came, so it’s no surprise. I live close to the border, and we have always used pequin pepper.

You haven't lived if you haven't tried traditionally made tortillas, they're miles away from regular ones. Buy a little tortilla press and some masa from your local Latino market (if they're worth their salt, they should have for sale), and see for yourself how much superior a taco is with them

Awesome clip! For me, there's nothing like fresh blue corn masa but a close second are green tortillas cuz it's mixed w nopales, a type of flavorful and nutritious cactus. Flour tortillas are traditionally used for burritos but they're an amazing dessert if you add a little butter and sugar, perhaps some jelly, it becomes a quick and easy pastry treat like toast.

There really is nothing else that can replicate that flavor. Up in AZ, we used to go to the Hopi reservation to buy piki bread. It was basically super thin sheets of blue corn rolled into a "loaf" as they cooked. Lightweight, delicious, and it was practically eternally shelf stable. Down in the Navajo Nation, we have blue corn mush. That stuff is like crack for me and I always ate my bodyweight in the stuff when we'd visit the rez.

That pepper is very abundant in the north of Mexico in the state of Nuevo Leon. In that state of Mexico they call it Chile Piquin. It is hotter than a serrano pepper. Great to see them due tortillas the old fashioned way!

Piquin chile is not texan, it grows all over the northern part of mexico, is basico for the cecina and many salsas.

Pequins are so hot but so fruity! I just freeze them in a bag and use when I need. They keep forever. It took me a while to get used to the heat, but their flavor is wonderful.
