I was excited to see Chef Sheldon, and so glad to see Gordon treat him and his culture with respect. Chef Sheldon Simeon competed in season 10 and 14 of Bravo's Top Chef, making it to the finals both times and winning Fan Favorite both times. He seems like a great chef, and a great guy. Good to see him doing well and to hear about his restaurant that he opened after Top Chef.

For me it’ was spam eggs and rice. If I wanted to go fancy I’d do slices of spam on rice wrapped in nori and make musubi. The stuff is everywhere.

I just automatically assume he's a character in whatever show he's in so seeing him so relaxed and talking about his family is much different from seeing him scream about lamb sauce.

Hell's kitchen is one where he's running an actual business. he is running a kitchen and a restaurant, with people that should have knowledge on how to cook. But he often times has to deal with people that has either no idea what they are doing, or just been doing it very badly their entire career. If you look at master chef or Master Chef Junior, he is a mentor. cause these are people that doesn't have the actual experience or the expertise of a chef, and thus is more patient with them. kitchen nightmares, another one, is where he's out here, spending money to help restaurants overcome its bad habits. thus he is overly critical and examines everything. he has to, cause it is not a mentoring moment, its a business analysis moment. All of these just demonstates how well he knows his own craft, ot only in the kitchen but also the finances.

He is doing a French style scramble egg which has a consistency different texture and consistency than "Diner Style" scrambled eggs. Diner Style scrambled eggs are supposed to be light and fluffy with large curds. And they are a lot more forgiving to make. French style is creamy with small curds, requires constant stirring, constant temperature control, and can very easily be screwed up.

@Joe H Indeed, like the hotels, and restaurants owners with unacceptable standards, in some of those cases, is even hazardous and deserved to not be scolded at like a child, but with the rage of an adult to another at the negligence, ignorance, willful or not, that could possibly even kill a person. If there are situations where bad business is out of their control (location for one which led to one of the places that actually impressed Gordon to shut down because no one showed up still.) When things are good, or in videos just like this, there he's generally having a good time, having laughs, jokes, and even learning from those around him, Gordon generally respects people unless they show lack of care for the satisfaction, health, and safety of the customer. If people pay for at LEAST decent service, they should not get crap instead, and have their time wasted for it. It's the "You can do _better_ that *this*" situation, hence the anger. Overall, I love me a happy Gordon, and a Gordon that gives the snack down to those who deserve it, and hopefully makes them better for it.

A part of the appeal as well isn't just seeing someone that's mad, but goes after a flawed system, incredibly disgusting restaurants that anyone witness to it, would likely never return, complaints about their service, and food, and yet nothing changes, they get away with it, until he shows up and his hand is forced, to make them accept the change into true *proffesionals* and to look themselves in the mirror, sometimes this works, but other times they eventually go back to their ways, and their business collapses, in other extreme cases, they get straight up shutdown. It may sound weird, or exaggerated, but it's almost like he's a defender, a food vigilante of sorts in those very cases, and who wouldn't when put in that position?

I am just an home mom, but I love spam too. I slice it and fry it with slice tomatoes, adding a touch of Tabasco ( or any other hot sauce) then I add the eggs in and just break them a little and let it set. You can easily remove the skin of tomatoes with a fork before adding eggs. Very tasty with Pita bread. Adding scallions makes it even more delicious!
