Gordon Ramsy probably won't read this. However, I did once make a Quinoa Salad similarly to the recipe shared by Chef Ramsy. It was greatly appreciated by friends and family. However, when my sick grandmother tried it, she chocked on a piece of shaved fennel. We did not have the chance to do anything. Paramedics were called to the scene (she was still alive when they arrived) and died just after. Thanks to that experience, I'm too petrified to enter the kitchen now.

*Gordon, Ceviche for Peruvians is sacred!!!* What you were making there is not ceviche. It’s a fish salad with a lot of citrus. Honor our dishes please, and If you want to be original and creative, which I’m doubting it now, name them differently. Ceviche is not a dish made only in Spain or in South America. It’s originated in Peru (keep the facts) typically made from fresh raw fish cured in citrus juices, such as lemon or lime, and spiced with ají, garlic, and other seasonings including chopped onions, salt, and cilantro. Don’t confuse the audience. Note: I’m not a chef. I don’t have to. As Peruvians we know about our gastronomy and have great cooking skills as well on how to employ our endless sources.

I'm from peru.. There's ceviche in Mexico, Ecuador and other countries too.. why do we say ceviche is from Peru? We love it and made it one of our best dishes but that doesn't mean it's originally from Peru.

We, PERUVIANS, again, say it comes form quechua, which leads us to the Incas, and as we know they conquered part of what is now Ecuador, who also say ceviche was first made there. When I was 14, I attended Italian Professional Institute for Food and Wine services and Hospitality. I'm left handed and I remember my professor reproaching me because of this. Each time he would say: "Cannot be on earth a great chef that is left handed, you are here and you worry me with your presence, can you name a great left handed chef?" Esto no es ceviche. El ceviche se caracteriza por una marinada instantánea donde el elemento ácido “cocina” el pescado y debe cubrir por todas partes el pescado para que la cocción se uniforme y delicada. Esto es más un sashimi de pescado con una salsa cítrica. Pero igual se ve delicioso.
