Oil temperature control: Shallow fry, splash of cold oil if frying oil gets too hot

I made this tonight as I so miss the fabulous fish & chips I used to get on London streets, hot, wrapped in newspaper, with malt vinegar. I just sat on the step outside the shop and ate it. Incredible. I knew GR would have an amazing recipe and he did not disappoint! Took me longer than 10:30 second tho haha. Especially because I had to turn my all purpose flour into rising flower. But this recipe is easy and SO worth the effort. Will definitely be doing this again. Be sure to watch this video and another video he made regarding this recipe before you do it as it helps because this all cooks fast. Also don't make the mistake I made and stack the fish in a pie pan with foil and a little vinegar drizzled over it, then covered in foil when keeping it warm. It will mush your bottom pieces. That's how we learn, right? :) THANK YOU CHEF!

She was saying that she'd get pissed off too with a lot of the problems shown, and that she's had to kick asses before when a service starts going off the rails. I'd like to talk more with her about the issues of bullying in the hospitality industry because I'm not in a position to judge. But normally she and I get together for wine and jokes so it's never really come up, haha.

@@jesustarin7501 same, actually an abusive relationship which lead to no relationship until they died. I have 4 daughters and they are all in their 30s now. Every one of my daughters can joke with me about their relationships and even intimate mishaps. I realized my parents supplied me with the knowledge of what not to do and made sure I passed on something much different to my children. I have 6 grandchildren and they are all happy and healthy and have a loving mother and father in their lives. If I do nothing for the rest of my life I know I've contributed to society in a good way and my grandchildren will pass those traits on. Peace.

But professional cooking is a cut-throat business and you only survive if you deliver constant quality (i know i couldn't do it). He got bitten in the back often enough to know how fragile every restaurant project is. His TV image stems from the fact that TV productions are focusing on the drama and by now people really should be aware that this never tells the whole story.

It's not really a burn though. Gordon Ramsay can cook as fast as he talks. I've been cooking for longer than you've been alive (assuming the "97" is your birth year) and I've never seen someone as skilled as Ramsay. I've seen faster, for sure, but they are nowhere near as good. And I've even seen chefs who are more refined than Ramsay, but they don't have the speed or the wide range of abilities. Gordon Ramsay is in a class of his own. He may let his family take the piss out of him, but make no mistake: that is no burn.

@Daniel Melon no he was not talking to his daughter, he was talking to the audience. It is a very common safety issue to do it exactly the OPPOSITE of what he did. We are SPECULATING that he did it opposite of what is taught in cooking schools, BECAUSE his daughter was there. Without his direct input we have no way to know for sure why he did it opposite of what he said, and what is taught.

He means lay it with the fish away from your body/hand. Otherwise your hand would be right over the pan of hot oil.
