48 Hour BIGA Dough Recipe for Neapolitan Pizza
Step 1 = Making the Biga Starter (30% of total final Dough)
Ingredients:
100g - Water (room temp)
200g - Type OO Flour
5g - Instant Dry Yeast
Instructions: Making the BIGA
1. Place water into a bowl or container that you can cover to make air tight later in process.
2. Mix in the yeast and stir around for a few seconds or until dissolved
3. Mix in the flour little by little mixing by hand for a couple of minutes then cover (air tight lid or plastic wrap)
4. Rest at room temp. for 1 hour
5. Rest in fridge (48 hours)
Step 2 = Remove Biga from Fridge to Make the Final Dough
Ingredients:
400g - Water (Room Temperature)
500g- Type OO Flour
15g - Sea Salt
Instructions:
1. Pour the 400g of water into your stand mixer bowl (Kitchen Aid)
2. Add the BIGA to the same mixing bowl (Break it apart with your hands and put it in the water)
3. Turn mixer on low and mix until the water appears milky (BIGA will still be in chunks)
4. Slowly Add 1/2 (250g)of the of the flour
5. Sprinkle in all of the sea salt
6. Slowly add the remaining 1/2 (250g) of flour
7. Mix for 15 - 20 minutes (Dough will be sticky)
8. Remove dough from bowl with a spatula and place on a dry work surface to “strengthen” the dough with your hands by picking it up with both hands (one on each side of dough) pulling it up into the air chest high then folding it back on it’s self (about 10 times - until dough is smooth)
9. Then gently roll the dough into one large ball keeping the top side of the dough up.
10. Place mixing bowl upside down over dough and let it rest for 30 min
11. Uncover the dough and “strengthen” the dough again with your hands by picking it up with both hands (one on each side of dough) pulling it up into the air chest high then folding it back on it’s self (about 10 times - until dough is smooth)
12. Let the dough rest again for 10 Minutes (Covering it again with the same mixing bowl from before)
13. Make the dough balls by cutting the dough in half, then cut each piece in half again until you have 4 equal pieces of dough (makes 4 dough balls between 250-280grams) anything larger than 280g may not fit inside a smaller pizza oven such as a roccbox or ooni koda, etc.
14. lightly flour your hands and roll the 4 pieces into balls keeping the original top side of the dough up for each ball
15. Place the dough balls on a floured sheet pan, spacing them out evenly, lightly flour the tops to prevent the plastic wrap covering from sticking.
16. Cover with plastic wrap and et dough balls rest for 2 hours at room temperature and then dough it's ready to use.
17. You can also ball the dough and then place covered back in the fridge (before they rise) for up to 1 more day if needed
18. Open a bottle of Chianti or cold beer and then make pizza!

Love your set up. We're relocating to a new home with a screened in porch and I am feeling very inspired to do something similar to what you've done in this space. Our family are huge pizza fans and hubby is a pizza snob (lol) so we've been considering the other oven, but I just recently learned of this one. Great presentation! Thanks.

Thanks for watching and commenting! Yes that is pretty much my thought on it also, I have tested our all of their models and accessories (still one more video to go on their newest product). I agree for pizza all you really need is the shelf unit and if you are tight on space the side tray attachment is nice (for me i have a large work area so not needed! For me the turning disc would be more useful for when i cook a steak in a cast iron pan so i can pull the pan out and turn it easily not risking getting burned, etc. but for pizza i enjoy using my turning peel! My favorite shelf unit so far is their newest one which i think they are calling the R-5 it's more of a, "Pizza Ledge" then a full shelf and is more like what a full size pizza oven would have and is only the shelf without any other attachments. Thats probably going to be my go to version!

I made that dough board and it's not attached, i can pick it up, wash it off and store inside. I am in the works to potentially partner up with a company to start producing them so stay tuned!

Almost bought one but went with the Solo Stove Pi Prime instead. I like that the stone is removable and I think it’s comparable quality for a cheaper price.

Good choice! I love the solo pi , it’s not quite as heavy duty as the roccbox and the burners not quite as strong, but you can still make great pizza with it and it’s a great price

A suggestion for when you want to get the pizzas onto the peel is to pinch the dough where you enter with the peel and it will get on much easier! :)

Thanks for watching! I do typically just leave it on High and I have a lot of peels but for the roccbox your’e going to want one with a 6”-7” diameter head and at least a 12” handle = 20-26” total length

Hello Christopher, first off, thank you very much for watching and commenting! I made my wooden dough board! Just used, "un treated" pine from my local hardware store and used mineral oil to seal it! You can order ones online but i wanted one that was bigger then the ones i could find! I also just got a stainless steel table that i am going to start using so i can just hose it down once i am done! Home you consider subscribing, thanks again!

I have the same proofing box. do you find that they don't close properly and you get a crust around the edges? The only way I can fix that is to put plastic in-between kind of defeats the purpose. not very happy with these but I see everyone using them. thanks

Hello George, first off thank you so much for watching! These dough boxes are not designed to seal down (lock tight) the lid and or second tray just sets inside the lip of the tray, the key is to make sure the lid and the second box are set flush on top and to ball the dough and immediately cover them up letting them proof covered up and only open when ready to cook. I do not have any issues with crust forming on the dough. In the summer make my dough, ball it, put them in the trays covered back in the fridge until a couple of hours before i use them.

@@HarplandProductions Hi thanks for the quick reply. I use them the same way you do. When I make the balls I quickly close the covers. if you push the cover in the middle there is a bit of play. I find the only way they work right is if I cover them with a towel outside or put plastic and then put the cover. Maybe they are defective but I read other people experiencing the same issues. I am not impressed with these trays especially at the price they cost. I good ball should be smooth and no crust. I contacted the company to see what they have to say! On their website they do advertise them as air tight which is not the case. I see everyone using them but few with this issue!

Yeah I’m thinking yours might have a slight warp to them or something, mine don’t lock tight but when you put the lid on it sealed properly! The good thing about this brand is that they’re well insulated so when I take mine outside if I keep the lid on it keeps the dough cool so it doesn’t over proof

@@HarplandProductions I agree but with mine the weird thing is that on the bottom of the pizza where its round it makes a crust. the rest of the ball is fine. Only when I put plastic on top and bottom and cover it i have no issues. I think this brand is a hit and miss. I saw many people complain about warping on Amazon. I emailed them but support never bothered to write back. A lot of people are using them but for the price they are not worth it. To me they are now junk. I rather use a baking pan and put plastic on it instead of these stupid pieces of Junk. I am looking for something better. Even that VIto guy on KZbin had them and he now has these gray ones which are superior.

How do you keep your oven face so clean? I see a lot of videos where the entire thing turns black. Is that from the wood. Look to get one soon. Good video BTW

Hello CB, i am pretty fanatical about keeping things clean. As soon as I’m done cooking pizza I take a damp paper towel and just wipe the front clean to get the majority of the black off, then once it cools down I wipe it down really well every night before I put the cover back on. Trick is just a wipe it down every time you use it that way the soot doesn’t cake on their! Honestly with just one wet paper towel the majority wipes right off, just don’t burn yourself! If it gets really dirty, I have a video I posted a few months ago showing how to clean your roccbox so check that one out also!

Thanks for watching! Hardly any time at all for 300°C. Maybe 15 minutes, On a summers day it usually takes less than 30 minutes to get to 500°C

First off, thank you for watching! There are quite a few, "Depends" in this one but for the most part for Neapolitan Pizza you want the oven' stone to reach a minimum of 750F before making your first pizza. The Temp gauge on the Roccbox and all pizza ovens is mainly for air temp inside the oven and not the best gauge of stone temp, for that i recommend getting a lazer temp gun, here is a link to the one i have found to be the best. MASTERCOOL (52224-A-SP Gray Infrared Thermometer with Laser amzn.to/3qIhcfn This being said, in the summer it should take around 15-20 min and in the winter for me it's more around 20-30 min. hope this helps.

thank you for all this information, I am aware of it, I have one just like this one and don't seem to get it hot enough and I don't want to use a gun if I already have a guage on the oven, just doesn't make sense to me, so I just wanted to know in this specific video how much time did you preheat it, and if you remember what the guage showed. and for what it's worth I think your cornishone looks great

@@houseonhold not 💯 sure, it was a few years and hundreds of pizzas ago 😎. But looking at it with the spots, I can tell the dough was still cold, that’s what makes the spots like that in combination with a hot oven! I typically always preheat 30-40 min and start cooking at 750-800F

Hello Cheryl, after using all 3 of their roccbox shelf attachments to cook pizza I personally like the smaller R-5 shelf the best! I like the fact when my oven cools off I can pop it off quickly and just put it inside the oven to store and gives me just enough space to pull the pizza out to add distance between the flame. I’m lucky that I have a lot of space and countertop so I really don’t need all of the other tray attachments! The larger ones are nice if you have limited countertop space I need a place to be able to set the pizza after cooking. In the upper mounted large one would be great if you were cooking on a small apartment patio or balcony or if you were using it as a catering business. So if you’re using it at home and you have your oven set up somewhere were you have plenty of table and counter space then I would recommend the R5 or the bottom mount R-10 (the larger one). Hey Dustin, thanks for watching! It all depends what you need / want. They gave me all of the set ups to test and review but for me and i prefer the smallest R-5 shelf, i think it's the best one, it's easy to take on and off, when the oven cools off it fits inside, so easy to store and it give you just enough space to rest the edge of a pizza. End of the day it all depends what your cooking space looks like, if i had limited space to prep, cook and put things then i would consider the larger ones like is this video but for me i have plenty of counter space so i don't really need the whole set. The R5 is right around $80 i think which includes shipping via Amazon here are some links! The prices on their website are all in Canadian Dollars so in US it's less, that's why i prefer Amazon because it's in USD. Here are some of the links of the things i have. Hello Jacob, Thanks for watching and taking the time to comment, appriciate it! For Neapolitan pizza i only use fresh mozzarella, either torn into small chunks or cut up in strips. The roof of the oven get's over 1000 degrees F and the pizza is only in the over 60 seconds. For this style of pizza you do not want the cheese to get brown on top, only to soften and melt slightly. When i do other types of pizza or want it extra cheesy i will use a shredded mozzarella to get more of a NYC pizza cheese look and taste and it give a nice even melt across the entire pizza. Hope that clarifies!

nice job !!! Get you a turning peal ditch the spinner deal. But mabe it works better with smaller oven what ever works for you. Most of the time i will do a 24 hour rise in refrigerator then run in my 650 p44 oven no pro just cooking for family :)

Yeah don’t really understand what this product adds. You turn the pizza with the very peel you use to bring it out and onto the shelf. You can also spin the pizza with the launching peel, without needing a shelf.

I agree with you regarding the turning disc, at least for pizzas, I prefer using my turning peel which is smaller than the roccbox launching peel so you can turn the pizzas without having to take them out at all! One of the drawbacks of the small types of ovens is that there’s not A lot of room to separate the pizza from the flame so having the shelf gives you that extra space to be able to pull the pizza back a little bit in case it’s cooking too fast. The turning disc in the shelf are also extremely helpful when you’re cooking something in a cast-iron pan! I was giving the complete set to review, personally I just use the shelf when cooking normally, I just tested out their newest model this week and will be posting another video today or tomorrow it’s probably going to be my go to product going forward!

Dude you invested in the turning peel so there’s no use for a silly ‘lazy Susan’ type shelf. The whole point of the turning peel is to keep the pizza in the oven and your launching peel from heating up and the next pizza from sticking. Perhaps you are advertising, or getting kickbacks but having used the Roccbox for about 2 years I see no advantage to buying this after market gimmick. Your technique is spot on (not over dressing/saucing, wiggling before the launch) and your dough looked great! Keep up the great pizza making!

First off thanks for watching and commenting! I received these shelf attachments to test and review! I pretty much said the same thing to them that i love the idea of having the shelf to be able to pull the pizza out when done or to have a place to set a cast iron skillet, etc. but I do not envision using the, "turning disk" as part of my normal use (unless cooking with cast iron possibly). I also mentioned to them that the ideal attachment would be a more of a, "Pizza Ledge" smaller and cheaper so they prototyped one and i have been using it for about a week, and it's spot on, its just a little 5" shelf attachment with no turning disk just the ledge / shelf it's really all i want or need! Hopefully be posting a video of it soon or you can see it on my instagram page. I think they call it the R-5 on their website. Thanks again for watching !

Thanks VamCaff for watching and commenting, Yes if you already have a turning peel than it reducing the need for the turning disc add on, but having the shelf itself is great to give you more space to pull the pizza out of the oven. These small ovens don't allow a lot of room so the pizza's are always right by the burner. For me the turning disc is more useful when cooking other items in cast iron pans that can't be easily turned inside the oven and are too hot to touch, makes is very east just to pull it out with the peel spin it and slide it back in! For normal pizza cooking i only use the shelf, this was a review of the product so i wanted to show all of the features and add ons. Thanks again!

Thanks Damo for watching, You can absolutely use the roccbox without the attachments but having the shelf is something that i definitely will continue to use. I really do not need the turning disc or the side stand because i have a lot of table space and i prefer using my turning peel but the shelf allows you to be able to pull the pizza away from the flame, the roccbox is so compact that it's always extremely close to the burner so it's nice to pull it out a bit and have some extra room! I have going to film the last review of their new smaller, "PIzza Ledge" the R-5 which is just a small 5" ledge that attaches, so far it's been one of my favorites, no bells or whistles but very handy

Hey Tony, thanks for watching! For me when I use my roccbox I only use the smaller R-5 shelf attachment! Having a shelf on such a small oven is a huge benefit allows you to get space between the pizza in the flame to get a perfect cook, in a standard larger oven the pizza isn’t as close to the flame so you don’t have as much risk of burning! All of the other attachments are more for people who have limited space or an apartment patio! And the turning disc, the only time I use it is if I’m cooking some thing with a cast-iron skillet, I can pull the skillet out with my turning peel spin it and put it right back in the oven!

The blur transitions are very annoying and make it difficult to watch your otherwise excellent video. Please stop using that effect.

Yes I got a little carried away with the, “Transitions” on this video, it didn’t look too bad until I shortened the clips….i agree, all of the cutting and the blurring wasn’t my best work! Thanks for trying to watch, definitely learned some best practices on this one!

This video was a new direct dough recipe, i agree it didn’t develop enough, I prefer my 48 hour fermented biga dough!

@@HarplandProductions that’s okay. What was the hydration if you don’t mind me asking. A tip that helps is when you see your batch doesn’t have the best development and you’re concerned when the balls flatten out, re ball them and make the balls as tight as you can. This often will make the difference to save the dough.
