This is the recipe handed down to us from my great grand mother Victirinr who came over the border to masssachusetts from quebeque in 1888. I continue to make it every other Saturday from Ictober until May. The only difference is the addition of light or dark brown sugar a heaping tablespoon to each pound of navy pea white beans. I have many memories of my mother before she would be going to bed she would wash the beans and pick through them looking for stones or bad beans and then she would suck them overnight and early in the morning put the beans in the oven checking them off in an all day to make sure they did not run out of water. She did not like a crack because she found them dangerous to empty out and serve beans from. Thank you for sharing this I hope other people make these beans. Do you have a delightful chair.

An excellent recipe indeed! Mine is nearly the same; I soak them overnight too, then drain the water and replace with fresh. At this point I simmer them for a half hour more only and start adding my adjuncts, salt and white pepper, bacon, 2 Tbsp hot mustard and a cup of HP Sauce and cumin. I have tried other combinations too in the past, albeit not lard but I will do so at my next baking opportunity with beans. I've been baking them at 325° F., but maybe I should bake them at 300° F. ? I'll try that too! Always willing to learn in trying something new. Thank you so much!

We would cook ours on Saturday and have them for dinner on Saturday night with codfish cakes or hamburgers or steak and homemade bread. And Sunday mornings we always had them with their eggs and we were all so fond of making toasted well buttered sandwiches with them for lunch. That’s why a family of four should cook 2 pounds of beans a week. Everybody loves them and they are great in the summer at a picnic.

Soak in a brine, add a little brown sugar, add a little soy sauce, remove the cover for the last hour in the oven to thicken the sauce. My thoughts
