If you don't want to add bacon, use a little oil (vegetable or light olive oil). It's also good with brown sugar instead of white. The reason you want to cook the water out is that it caramelizes right at the end--but watch it closely because it can burn at that point!

I made my green beans like this for Easter dinner... I also added 2 pieces of fat from the ham. These beans turned out AMAZING! Used 3 28oz cans of the big Italian green beans (flat looking) 6 slices cut up bacon & 3 tables spins sugar. The beans was the Talk of the dinner. Also made your cowboy beans. So so good. I said countryboy cooking with Marshall was at our Easter dinner 😄.

My mother does her green beans very very similar. There’s only two differences… She fries her bacon first in the pan until it’s almost done. Then she dumps in her green beans with the liquid just like you do. Then she cooks them pretty hard down to almost no liquid just like you do. However she does not add sugar. And her green beans are delicious. I am going to tell her about this so she can add the sugar next time. I want to try it.

Sugar is the secret ingredient. It eliminates the canned taste, whether using canned beans from the store or canned from the garden.
