Grandma's Hashbrown Casserole & Cube Steak with Gravy | Southern Cooking
Grandma's Hashbrown Casserole:
Ingredients
1 (32-oz.) package frozen diced hash brown potatoes, thawed
1 (10 1/2-oz.) can cream of chicken soup
1 (8-oz.) container sour cream
1 cup shredded mild Cheddar cheese
1/2 cup chopped onion
3/4 cup unsalted butter, melted
2 cups cornflakes cereal
Directions
Prepare the oven and baking dish:
Preheat the oven to 350°F. Grease a 2- to 3-quart baking dish with cooking spray.
Combine casserole ingredients:
Stir together the first 5 ingredients and 1/2 cup of the butter until well blended.
Spoon into a greased 2- to 3-quart baking dish.
Crush the cereal, and stir in the remaining 1/4 cup butter. Sprinkle over the potato mixture.
Bake at 350°F for 50 minutes.
Buttermilk Biscuit Recipe:
2 cups self rising flour
6 TB unsalted butter (cold)
1to 2 cups buttermilk, you may need more or less depending on the thickness of your buttermilk.
Directions:
Preheat oven to 350°
Combine all ingredients and mix by hand, using a little flour to keep it from sticking to your hands too much. Pinch of pieces a little bigger than a golf ball and roll into ball shape. Pat in extra flour and press slightly onto baking pan.
Bake in preheated oven for 10-15 minutes, until bottoms of biscuits are browned. Brown the tops and spread with butter!
Cube Steak & Gravy recipe:
Cube Steaks, I had 9, but just get as many as you need.

salt & pepper, or your favorite seasoning!
eggs
oil for frying
Depending on how many you're making you may need more or less flour and eggs. I used about two cups of flour and three eggs.
Heat oil in a large skillet. Season the flour with the salt and pepper. Whisk eggs in a bowl. Dip cube steak in flour, then eggs, and then the flour again. Cook in hot oil for 3-4 minutes per side.
When the cube steaks are done use the oil in the pan to make gravy. If your oil is too messy then you may need to switch it out for fresh oil or butter.
Turn heat down to medium. Add flour and mix well. Start adding milk a little at a time and mix until smooth. Continue adding milk until you get it where you want it.
