This is really impressive In regards to people thinking the foliage color is too green, I can see a few culprits I'm an artist and I've often found to get a yellow color to read properly I have to push it into orange slightly? Which is probably cuz our eyes are way more sensitive to green light. That's probably why the light is so golden in the sky in TotK. I also think Minecraft's atmospheric tools are hurting it? Like it adds a blue tint to imitate atmospheric scattering. It looks way more yellow in the wide shots. That said, I think this turned out absolutely fantastic and I can't wait to see more!!

Also, the closest color to the zonai architecture in Minecraft is probably smooth stone, but since it has a very limited palette, quartz is a good choice. If you ever retouch or expand this, for the ice mountains I'd recommend just doing regular ice over a layer of the regular stony mountain palette you're already using.
