I worked many years in all steps of the canning process at a major cannery in Alaska that supplies to every retailer imaginable. There is NEVER any sorting done based on quality. There is only a code on the bottom of the can, without a label, indicating which species of salmon, date, etcetera. The quantity of cans of each retailer wants are shipped without labels. EVERYONE gets the SAME high quantity salmon.
