As always simply brilliant !!! I grew up in a predominantly Greek neighbourhood in Australia ( the other Greece lol ). I know Greek food and love it, today I will be cooking Lamb this way and just to make it better we will be drinking Tsikoudia from Crete. Cooked pita bread almost every day during the last week, also made a huge bowl of tzatziki sauce and a big bowl of loukoumades sweets. For main dishes I cooked souvlaki, chicken gyro, stuffed peppers, meatballs, greek style potatoes and lentil soup. After that week, I'll need to focus more on vegetables, lol. But everything was successful and super yummy :)

Hi Akis I am from little old New Zealand couldn't find Greek Olive oil had to make do with Spanish :-( Made this dish with chicken worked great I am hooked on Greek food and working my way through your recipes Keep the coming!!

Although no oil tastes the same, if you can't find Greek, settle for Italian. Spanish export oil is often mixed (greek italian, and spanish) oils and often too bitter. I would avoid Spanish oil although it is the easiest to find. Greek Olive oil is full of flavor, usually single variety and location. Like a good scotch single malt or exquisite wine. You can just have it on some bread with salt and oregano and tastes amazing, and usually is smooth with low acidity.

Thank you for your videos. I am a chef as well and also Greek. However I was adopted and never learned how to cook Greek food, not in school or at home. And I've never cared for geek food either. In Texas all we have are dolmas in a can and gyros. Not a great selection. I've been trying to understand my culture more and reading on geek food. I truly love your foods. You have shown me that Greek food is more than just gyros. And that it's very similar to my style of cooking. Thank you so much for the insight. I can't wait for my next dinner party. This dish will definitely be on the menu. 😉

@@cristinedejongh8452 You will ask around in Greece for restaurant which makes "Magirefta" foods (Greek cooked/casserole foods). Most tavernas choose to bypass for 2 reasons, one in the past Greeks when going out did not want to eat the house Grandma or ma foods, they went out on a Sunday to eat fish or meat and so the cooked ones are for house. The other, they take preparation and time to make. Now it is a little more used outside with fewer people cooking at home and with wanting to eat a little healthier when getting delivery. Ask for place with "Magirefta" foods.

There's a similar version to it in our Asian cuisine in which we add black-eyed beans, no lettuce just dill in it also no eggs or lemon juice and served next to white rice. 😊

Well i tried both (lived in both Greece and Italy) and i can assure you, Greek is way tastier and dense. The southern Italian olive oil is the only one contesting the greek ones, i guess it's because the south Italian climate is like the greek one, which is the best for the olive trees!

Daniel P. C Me too! I can eat it straight from the grill but not from pot! You can not remove the smell ! You can make this recipe with pork, chicken or other meat that you like.My mother used to make fricasse with pork! It's a lovely winter dish! :)
