Hi John, many thanks for your comment which I will keep in mind on my next cookout. Generally much of my food is cooked at around 200-250c, for direct cooking on the grates its both burners full on, get the grill very hot to sear meat when if first hits the grates, then turn down the heat, I always check the internal temperature with a thermometer where possible. For indirect cooking with a heat shield and grid, its large burner only usually at around 200c. Glad you like my videos, thanks for watching.

Are you aware that they don´t catch any prawns in Greece? Nor is salmon a host of the mediterranean? They barely catch octopus, most octopus you see are imported. 99% of the fishes on the market are farmed fishes.

Hi there, yes I am aware of your point, the clue is in the video title, Greek STYLE. While on holiday in Greece I had a similar dish, a selection of fish and other ingredients cooked in a foil parcel on a barbecue, the menu didn't state where the prawns were caught. All I was interested in was the amazing taste and flavour, and that's what I created in my video. Thanks for your comment.

Indeed, prawns fron the greek seas are not available abroad. You can only find them in a greek fish narket or even better, buy them from the trawler as soon as it moors at the harbour at sunset from october to may. As for the salmon, a brilliant cook from the midlands added kalamata olives and delivered an excellent combination of north atlantic and mediterrenean flavours.

Hi Lefteris, many thanks for your comment, it is nice to know prawns caught in Greek waters are not exported all over the world, unlike those from Scottish waters. The dish I had in Mykonos was most memorable and inspired me to cook something similar.
