I made this tonight. They were very moist. Good way to use an over abundance from the garden. --BUT-- The uncooked veggies plus feta (minus the flour, baking soda and frying) made a top notch salad. Will make a great salad bowl base. Next time I have these ingredients I will serve them raw (minus the flour, baking soda and frying) over spaghetti squash, halved, deseeded and cooked. Add a glass of wine and you have a perfect summer meal.

Kurdish people have a version of this and we use meat and tomatoes and parsley and seasonings and flour and use water to help bind it. It’s really good in sandwiches with some mango relish on it

I cook this same recipe but....... I also add jumbo shrimp, and shredded pre-cooked cod fish. Then, I use Duck Sauce quick drizzle on top and I serve it with avocado, tomatos and fresh riped sliced mango slices and the drink a Roscato Rosso Dolce sweet red wine chilled. That's how I would bump up this recipe to a Platinum Gold level. Thanks Chef for the video.

I made this for dinner yesterday, without any cheese and with canned tomatoes, because I could not wait to make them. I changed around the spices a little bit, using what I had, including some homegrown mint. Really delicious! This recipe is definitely a keeper. It's nice to know that when my neighbors leave zucchini on my doorstep in August, I will be able to shred it and use it in future months to make these delicious fritters.

I've never been to Iran, but my father had visited Tehran in 1979 and told stories about the cuisine there how everything tasted amazing :) I looked up the Khoresh Bademjan and the Tachin dish and found the recepies on a site called Persian mama. Made this recipe many times. It’s delicious! Only one big flaw - so I altered it slightly just by adding a couple of eggs to bind the patties together so they don’t fall apart while frying! 👍🏻

made these last night and had this issue they stuck to the bottom of my pan ( i used a dutch oven with plenty of oil) and when trying to flip them they broke apart maybe more flour next time, seemed like there was too much liquid inside from the veggies

Excellent recipe and execution as always, Chef. On many islands they use sun-dried tomatoes in the batter rather than fresh ones, and the fritters are also delicious. Just one thing: feta cheese isn't feta cheese unless it's Greek ;)

Just made these. If using a sauté pan I recommend cooking on med high - high heat. Otherwise fritters will get oil-logged / too burnt. For dipping sauce I used lemon Greek yogurt and garlic, salt and pepper.

These are a Santorini Specialty. They are also available all over Greece

They are indeed. But this is chef Johns take on them. We don't put zucchini or oregano or feta. We use red onions fresh mint, parsley green peppers, and a touch of cinnamon along with the Santorini baby tomatoes that are grown here without water, giving them the most deep and sweet tomato flavour! But it's so nice of chef John making these known to the general public!

I'm sure flipping helps them crisp up, Chef John. I'm not sure why you wouldn't be supposed to do it. It's the reason why shallow-frying is a good idea for most deepfried dishes. The side that's not exposed to the oil releases water more easily. This is the same logic behind frying french fries twice, just on a smaller scale.

I am a southerner, and a veggie fritter I like to make to use up leftovers is a black eyed pea and collard greens fritter. Super easy, super delicious. Crumble up your leftover cornbread in it, too if you have any. The acidic finish I use is pickled hot pepper juice.

I would use fresh oregano especially since it is growing in my herb garden. This would be useful for using up those zucchini that went from not quite ready to monster gourd overnight.
