Indulge in the delicious taste of Afghanistan with this green mutton recipe! Authentic and flavorful, this dish will transport your taste buds to the heart of Afghanistan.
Ingredients
Mutton - 500 g
Cinnamon stick - 1 inch piece
Green cardamom - 4 to 5
Salt - 3 tsp or as per taste.
Turmeric -1.5 tsp
Ginger garlic paste - 2 tbsp
Coriander - 1 cup
Onion chopped to big pieces - 1.5
Green chillies - 3 to 4
Curd - 1 cup
Cream - 1/2 cup
Garam masala powder -1 tsp
Black pepper powder - 1 tsp
Cummin powder - 1.5 tsp
Oil - 4 to 5 tbsp
Method
• Grind coriander leaves, onion and green chillies with some water to a smooth paste.
• Transfer the paste into a bowl.
• Add curd, cream , cummin powder, garam masala powder, salt and pepper powder and give it a good mix.
• Keep it aside for later use.
• Heat a pressure cooker on medium heat and add 2 tbsp oil.
• Put green cardamom and cinnamon sticks and stir.
• Now add the mutton along with salt, turmeric powder and ginger garlic paste.
• Stir for 5 to 6 minutes.
• Add 3/4 cup water.
• Cover it with the lid and turn the heat to high flame.
• After one whistle turn the flame to low .
• Switch off after 18 minutes.
• After the steam releases naturally, separate the mutton from the soup ( yakhni) .
• Coat the mutton with coriander paste and curd mixture.
• Hest a pan and shallow fry the mutton pieces*(5 to 6 pieces at a time)* until they turn nice and golden brown.
*Once all the pieces are fried add them back into the pan.
• Put the remaining curd mixture if any and also the soup (yakhni.)
• Cook until the gravy thickens and switch off the flame.
*Garnish with some fried onions.
• The Afghani Green Mutton is ready to relish.
