Casuarina Prison has an organic composting system which saves money, diverts waste from landfill and helps grow more nutritious food.
15 cubic metres of scraps from its vegetable processing workshop used to be thrown away every week.
But now the nitrogen-rich off-cuts are being put to good use, and also helping to teach prisoners the value of waste.
