Dang people! This video is for COMPETITION style ribs. Its trimmed that way for a reason. And I can assure you the trimmings were used for something else and NOT thrown away. Geeez lighten up.

That sure is a lot of layers of rub, glaze, sauce, and I didn't notice a smoke ring. I am not in agreement for this style, but if it works for you and gets you wins at competitions, then keep it up. I do not eat any pork at all , but I do cook it from time to time when I am asked by friends or family.

If you have to put that much rub on, make a stronger rub. Way to many different flavor profiles for a rack of ribs. Also get a stick burner for some real smoke. Didn't see no smoke ring

I understand that times are going to vary from rack to rack, but could you give us some approximate times? How long did they cook before wrapping, how long did they cook in the wrap, and how long did you cook them to set the sauce?

it can be a shock to the home cook seeing you cut up the meat like that. best to explain as you go along as to why you are doing what you do.

The only reason I can see why he threw nearly all the meat away is because he is doing it the way he would at a competition. Center bones are the ones they take to the judges. Anyway, it was really hard to watch he throw all the meat away across the top side of the ribs.
