HWC usually goes about a week past its use by if it has stayed nice and cold, and I nearly always pull a new carton from the back of the shelf hoping it hasn’t warmed any with all the opening and closing of the doors at the store.

Oh, another thing I do is by a $10 package of beef bones at the butcher and instant pot them (used to just boil-then-simmer them for hours in a pot). Then I strain the bone broth (maybe a couple of rollups worth of meat?) and let it sit in my largest casserole to cool a bit. That way I can scoop off the tallow and baggie it up, then pour the bone broth into muffin tins and freeze it into “pucks” for flavoring or soup or whatever. It is SO good for you and pretty delicious just to sip when its below freezing like it is here in Texas these past few days! UGH!
@firequeen21948 ай бұрын
@@lesliebooth2833we still have one store with a real butcher counter. If I give them a week’s notice, they will sell me leaf fat from a pig or cow CHEAP. It’s scrap to them and I use it to make tallow and lard. Rendering it is so easy and it makes so much! I also always save bacon fat (strain it). All are perfect for cooking and flavoring meals. Lard makes the best pie crusts. Tallow and lard, once rendered, are a pure fat with no taste.

Ooh, I have a tip! As long as you don’t have a severe case of Celiac, check the bulk bins at Winco! They have a decent selection of flours, sweeteners and spices for cheap. My other tip is to use the air fryer to cook frozen cauliflower before ricing it because it gets a lot drier without taking any extra time beyond the microwave instructions if you’re cooking for two. I usually end up cooking them at 350 degrees for 10 minutes after preheating, maybe 12 minutes if not preheated. I don’t add any oil.

I've been eating Paleo, then Keto and now Carnivore since about 2010 or so.... here are a few tips that helped me to organize and to be efficient. First of all I designated several hours on Saturday to food prep for the week. I had 1.5 hr commute each way and worked 10 hr days so this was VITAL to me succeeding... I would shop every other week, only buy meats in bulk (much cheaper per pound) and then when I got home I put 3-5# bag of frozen chicken breasts (boneless, skinless) into the pressure cooker and proceeded to break down the bulk packages of meat and cheese etc into meal sized freezer bags. That prevented any meat loss. I would keep out enough to make 2 or 3 meals (double batch each) and half of those would either go into the freezer to take out the morning needed or into the fridge if that would be our meal within the next few days. Once the chicken was done I would drain it, use the same pot and my hand mixer and shred it in less than 30 sec. Then that went either into the freezer or into the fridge. For fresh veggies... those were either blanched and frozen in meal sized portions or planned for the first few days meals. I joined a local Bountiful Baskets to save BIG $$ for veggies that were fresher than the store so those also lasted longer than grocery store veggies. Highly recommend them! Lastly... I have a multitude of 15 minute meals in my rotation. When you are away from home for a long day... how easy is it to set up a taco bar with your cooked chicken? Or make a quick cream sauce that you throw chicken in and eat over cauli rice from the freezer? Curry is 15 mins if you use the thai curry pastes.... SO many possibilities. This really helped us to eat fresh and to eat easily. I did this while we had teens at home... teens that played sports. You just have to decide where you want to spend your time. I chose food prep. My average food spend per month for fresh, healthy food up to about 2018 was $600 - $800 for a family of 4 just by not buying snacks. If I couldn't make it... we didn't have it. Now, with inflation I have to spend a little more but I think we are still WAY under the typical family of 3.

One tip I would offer is to always plan your meals and use a list. It can change if you find some great bargains on meat or veggies but HAVE A PLAN for your purchased food. The rest of my groceries might be frozen, store brand veggies and fresh when I can.

OR, you can cut it all up super thin and use it for a huge batch of homemade beef jerkey dried out in the oven, OR - you can obviously just cook the whole roast . One of my favorite things to do...get the stuff to make chef salads (go heavy on protein so it'll keep you full!) Eat that for 2-3 days -- however long you can get your lettuce to last. Then, since of COURSE you'll have extra veggies and meats, make omelettes with all those goodies inside.... (tomatoes, mushrooms, green onion, chicken, pepperoni, ham, cheese, etc. A 3 egg omelette is very hard to finish and no way I want a snack after!) I also like to buy meats in bulk packages, separate in half, and freeze. Then when I pull a pack out I cook it ALL..typically I can get 3-4 days worth out of the one package. (at least a week out of a full bulk package - I eat a lot of meat. Protein makes me stay full so I don't want to snack.)Air fried pork chops and a pile of veggies is fine 3-4 days in a row and I make something completely different after that, to stave off boredom.

Tips and tricks for budget friendly and cost savings is something we can all use! My tip: If freezer space is scant and you can afford one, dehydrate fruits and vegetables. Then, vacuum pack them either in cans or via a vacuum sealer. A jar vacuum sealer is about $15-17. There are all kinds of foods that can be dehydrated including frozen and canned vegetables! People who have the fancier machines can even dehydrate meats, soups and broths! Another tip: precook ground meats and freeze what you won't be using right away. You're not storing excess fat and water that way and have meat ready to add quickly to dishes!

Thanks for the tips! I too, buy rotisserie chicken and use all of it including saving $ buying broth/stock buy using the bones to make bone broth. Add some chopped greens, and maybe leftover chicken and that can be a light keto lunch for the week. On that note, I would LOVE to know what you both use leftover chicken for. Frankly, I'm bored with what I typically do -- day 1 is rottisserie chicken and sides, the rest of the week is either soup or chicken salad (over lettuce) and on rare occasions buffalo chicken bake. As for OMAD, my husband and I try but we have found we usually need 'something' by about 3pm on work days, weekends are easy peasy. On work days when we just can't make it we will have something super small like a cucumber or pickle, or just a cup of warm homemade broth. On the topic of inventory - we do that as well but the key with that is to document it in a shared note (like Google keep) and then AS you use something, update your inventory - and also make sure you check the inventory before you shop. THAT is where my husband and I screw it up! 🙄

for people who have Costco memberships, the Costco rotisserie chickens are a terrific buy. They are larger than the usual supermarket rotisserie chickens - and they are only $5.

I keep a sharpie in my kitchen and write the expiration date on cans, bags, spices, jars, etc. in very large print. Sometimes on older items, the expiration date is faded and hard to read. Also, I like to empty items into Mason jars so it’s easier to organize in the cabinet. If you write on glass with a sharpie, it will wash off (sometimes you may have to do a little scrubbing by hand)

If you mark over the sharpie with a dry erase marker it will wipe right off.

Watch when your local stores start their next weeks sales. Go in the last day of a sale and check meat dept. That and mondays there will be meats reduced in price. This, and do not be afraid of red meat that has a touch brown coloring on it. You do not want to see yellow fat ,but some brown is fine. Just freeze or use the day you buy..The only meat to not do this with is ground meats. Also, if you have a food processor, buy chuck roast or cheap cuts. Chicken on sale , cube it and make your own ground meat. To add fat and make the best burgers you've ever had, add just a touch of avacado oil and a couple spoons of clean mayo while griinding. Grind until it just starts coming together ,not mushy or still chunky . You'll see the best consistency for burgers and ground frying Oh if you save your bacon grease, add just a spoon of that instead of oil. The taste is mild and great if you like bacon.

Pork roasts and chicken thighs are cheap! Commonly find them for $0.99/pound

Great idea for budget keto meals. Hint: i was always cold during Michigan winters. After my husband died and rising heating costs, i had to turn down thermostat to 65/66. I was super cold. I remembered my husband wore t shirt, long sleeve shirt and sweater/?. I am doing that. Not fashionable but lots warmer. I also try to keep humidity up with humidifier. Higher the better.

I just don’t know how you cold weather folks do this all winter! It has been below freezing for three days here in Texas and it’s just almost more than I can take! I have a ton of metal in my legs and I am going THRU the Tylenol!! But I am doing what you said, I have on two shirts and a sweater (and 2 pair of pants-oh, and a wide headband over my ears!)! Good thing I live alone, right??!! LOL!

I know. Cold weather makes your body ache. I'm 83 and thinking about selling. It's beautiful here but my place takes a lot of work in warm weather. BTW I have light pants on and very heavy ones on! A big problem with sitting all winter is you lose muscle.

Love your videos. I definitely want you to have budget keto ideas for cooking and shopping. One I do is I pick a country or region and find recipes from there every week. I can sometimes just cook as is or adjust non keto ingredients for similar ingredients.

I don’t buy mixes anymore. I read the list of ingredients on the package like taco seasoning and just buy those and make my own. That way I can make it it many times for pennies.

Tip for the rotisserie chicken… I will eat some the day I buy it, then I shredded the leftover and store it in chicken broth. It will keep well, will not dry out, and it will retain flavor.

So glad you mentioned that on keto you run cooler! I noticed that and didn’t get what was happening! I have always been someone who is hot when everyone else is freezing.

I needed this reminder! Thank you 😊. I live alone, used to having, and LOVE, leftovers. I sometimes buy precut veggies because it’s quicker for me and I’ll end up tossing a rotten package 🙄 I try not to but…it happens 😂. Budget-friendly meals is awesome! I can’t wait. I need a Comfy 😬 (I sneeze when I look into a light!)

Don't toss... either dry them on a cookie sheet or freeze them. Onions freeze great & dry even better 😋 No need to add heat or anything, just spead on a cookie sheet & allow to dry, turn over morning/night, till moisture is gone, then place in jar or baggie!

I like crock pot meals with cheaper cuts of meat. I saw Steak Umms in the Dollar Tree today, so it might be a good challenge to shop budget keto there.

I’d say instant pot is a good investment, I have 5 kids and sometimes forget to thaw meat and you can put meat in frozen and cook it fully in under an hour
