GROOT Kombuis | Reinate van den Berg-Lord met haar Biltong Jam 'Flatbread':
Biltong Jam
Ingredients:
2 red onions, finely diced
2 cloves garlic, crushed
5ml Ground Coriander
200g biltong slices, finely chopped
60ml balsamic vinegar
60ml golden syrup
60g Brown Sugar
60ml Water
sea salt and freshly ground black pepper, to taste
Method
1. On medium heat, Add finely sliced onions and sauté slowly until they are soft, golden, and caramelized.
2. Add minced garlic to the pan and fry for 1-2 minutes until fragrant
3. Add the rest of the ingredients
4. Lower the heat and simmer the mixture, stirring occasionally, until it becomes sticky and jam-like. This can take about 10-15 minutes. Adjust with a little more liquid if it thickens too quickly.
5. Taste and adjust seasoning with salt and pepper as needed.
6. Let the biltong jam cool before serving.
Flatbread
Ingredients:
330g Cake Flour
5ml Salt
160g Water
1 Large egg
Olive oil 30ml
Method:
1. In a large mixing bowl, combine the cake flour and salt.
2. In a separate bowl, whisk together the water, egg, and olive oil.
3. Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms. There’s no need to knead the dough.
4. Cover the dough with a clean kitchen towel or plastic wrap.
5. Allow it to rest at room temperature for 1 hour.
6. Divide the dough into equal portions (depending on the desired size).
7. Roll each portion out thinly on a lightly floured surface. Aim for an even thickness
8. Heat a non-stick or cast-iron pan over medium-high heat. No oil is needed.
9. Place the rolled dough into the hot pan and cook for 1-2 minutes on each side, or until golden spots appear and the flatbread puffs slightly.
10. Remove and keep warm under a clean towel
