This Guyanese dish of root vegetables can be eaten on its own, or paired with stew fish. If you wanted to try the root vegetables on its own, add more onions ( more is better tasting). For the stew, use any fish that you like, fry it with salt and lightly dusted with flour.
Stew Fish (Haddock)
2 lbs fish ( lightly fried)
2 lg onions
2.5 lbs tomatoes
12 clove garlic
3 tsp tomato paste
2 tsp black pepper
¼ cup oil
Cassareep to color
Salt to taste.
Boil and Fry Root Vegetables
1 lbs. plantains
1 lbs. cassava
1 lbs. sweet potatoes
1 lbs. eddoes
4 large onions
Pepper as you like.
Salt to taste.
