Against The Grain is an excellent book that explores domestication and its relationship to the early states. It is likely that the major reason that perennials were not domesticated primarily was because the states were more interested in hoarding and appropriation than feeding people. Hence why there have been no major Empires founded on the banana, casava, or yam despite their high caloric yield.
