A verities of tasty dishes like curries and snacks can be prepared from brinjal. This is a vangibath, that is a rice item from brinjals. Here we have used a little longer, but thicker breed which have less seeds. So you can use brinjals which have less seeds. Vangibath masala powder preparation is also shown in the video. Rice should be cooked non-sticky.

I prepared this today with eggplant (purple). The taste is really, really, yummy. I feel fortunate to eat vangi bhath like this, I'm going to stop preparing vangi bhath in my old style. The powder is mesmerizingly fragrant and delicious. I added little bit of fresh home made ghee in the end as my vangi bhath was less oily( I added olive oil instead of coconut oil). It balanced the spiciness. In 35 minutes, the vangi bhath was ready. This is the exact same vangi bhath which I used to have in weddings , served for breakfast. I have no words to describe how much I enjoyed this one today. It tastes best when the rice is fresh and moist. This most delicious Vangi bhath recipe deserves 1M views!!
