Okay guys so I actually tried this. First thing to mention is that when I just added the tallow and cheese powder to a hot pan, it turned out much like guga's failed attempt. But i found an easy remedy- fold the cheese powder into the wagyu fat BEFORE heating. This works much better and similar to what you see on his second attempt. However, I actually wouldn't recommend heating and straining. I tried making this burger 6 ways. Notably, unlike guga I shallow fried all of them on a griddle rather than deep frying. Methods: Mixed tallow/cheese: Folded in cheese, then heated/strained Folded in cheese then mixed into raw meat Folded in cheese, then slathered on top of patty on the griddle Unmixed tallow/cheese: Mixed cheese into raw meat Added cheese on top of patty on griddle Added cheese on top of patty after flipping Honestly the best one was the one where I just put cheese on top of the patty after smashing on the griddle. It had the best crust and the most cheese flavor. Was also the juciest. Second favorite was the cold folded tallow/cheese mixed into the raw meat. After that it quickly becomes a toss up. And quite frankly, shallow frying in just the strained tallow/cheese oil like guga showed in the test was worst one. Of course, I'm sure guga is much better at cooking burgers than me so results may vary. Anyway maybe deep frying is better, might try that. But I figured I'd give some feedback for anyone actually looking to try this as it seems like most people in the comments haven't/don't.

It is true, this much meat and fat almost certainly mean all three men will lead shorter lives from it, IF they live long enough for it to catch up with them. On balance though, life is more than duration. Fine living is a fair tradeoff for many of us rather than live to be 95. Whether old age brings cancer, dementia, heart congestive failure, emphysema, or whatever, it's just not prettry. I'd rather live well and then deal with the consequences than to live safe or frugal.

Yeah he didn't actually make the cheese oil, he just made cheesy wagyu oil. Really disappointing that he didn't want to go through the trouble and just gave up. Like the cheese oil and cheesy wagyu oil are two totally different things and defeats the entire purpose of the experiment. Sucks

The “burger sauce” is called fry sauce. We invented here in Utah back in the late 60’s. A local chain restaurant called “arctic circle” invented it. It’s been a well known Utah staple for decades. Literally every restaurant here, sit down or fast food; has fry sauce. It’s even better if you use ranch instead of mayonnaise.

Yeah in Wyoming it’s been made since the roarin 20s. There’s a steakhouse that had their 100 year anniversary that had displays of what they’ve made over the years. Fry sauce was one of their first takes.

I think a good way to collect the cheese oil AND make something awesome as a topping or side snack would be to make a batch of "cheese chips." There are plenty of recipes online for them, but a major byproduct of them is the oil. You've shown me how good that oil can be, so this could be a way to not waste good cheese in order to get the oil. THEN mix it with the wagyu lard.

Maybe the control should have been pan fried/deep fried in just the wagyu tallow (without the cheese), just want to know if the cheese really made a huge difference on the wagyu fat or if it's just the wagyu fat you're tasting (maybe the wagyu alone will overpower the cheese). I was also disappointed he didn't do this comparison. Once he eliminated the actual cheese oil mentioned in the title of the video, he made cheese-flavored tallow, but didn't compare it to non-cheese-flavored tallow.

Yeah, cooking beef in tallow is always going to have a richer flavor than cooking in oil. And a powder is designed as a concentrated flavor, so it's not surprising that the cheese flavor probably stood out more than the cheese oil. Comparing the tallow alone with them would make sense.

I bet you could put the cheese powder in a cheese cloth and tie it up and drop it into some warm oil to infuse the flavor while making the milk solid clean-up much faster and easier. I would recommend shallow frying and basting over deep frying as you're not going to want to keep the leftover oil that was used to cook. This way you can make a larger batch of cheese oil in advance and just use smaller amounts each time you want to cook (a shallow fry only requires about 1/8" of oil in the pan).

I am from Zambia 🇿🇲 and Wagyu was already discovered back in the 80s it was called Zambika Fat every one wanted it but it didn't come cheap even though it was heavily promoted on every forum. It kind of makes sense, if I remember correctly msg occurs naturally in cheese so I wouldn't be surprised if some was in that cheese powder infused wagyu fat

It isn't the fact that melting the cheese and straining it is too hard, it's the fact that he has to do over and over and over to get enough oil.

The major complaint was that it was both: tedious and really expensive. Wagyu tallow is fairly cheap on amazon and you can cheese powder off Amazon pretty cheap too. Cheap and tasty ingredients combined into something that was much more than the sum of its parts.

Definitely. Especially from the time perspective. Way more efficient, since you're not wasting a bunch of cheese to get the oil.

Wow. If my wife saw the face I made at this video, she would think I was watching something different. I tend to make steaks more than burgers, but I think I'll be making more burgers now. Those smash burgers look delicious. Thanks for another great video.

This is my dream burger. ever since I watch George Motz deep fry the burger in his house, I really need to find the courage to fly to middle America and try a deep fried burger. I may never be lucky enough to try something like a deep fried Wagyu cheese oil burger, but this is my dream....

Wagyu oil infused with cheese powder is cutting edge! Gotta wonder how the wagyu affected the flavor of the cheese powder oil compared to if it had been in a more neutral oil. Would be interesting to see how fresh cheese oil tastes without anything covering up the flavor as the oil from fresh cheese may not have the same flavor as dehydrated cheese that doesn't contain the oil. That is why a more neutral oil would help with the test. Love this video, Guga is inventing so many amazing things, it doesn't matter what he tries, its all always good and fun!

Oh yeah, I remember when Andrew did something similar as part of a SpongeBob recipe for Binging With Babish (except he fried the whole burger). That said, he did fry just the patty for the Ultimeatum.
