As son as you have done the very first tiny story step, you can jump into PvP. There you are auto lvl 80 and can use any weapon, any trait (also specializations) and any skill. That way you can do a fast test. There are NPC's in the PvP lobby for you to test on :)

I did know that but it is very much not the same. I much prefer learning as I go and gain the abilities as they 'stick' better in my memory versus spamming through different builds.

Daredevil is super fun, Staff + Pistol/Pistol is like playing Dante from Devil May Cry

Agree! I love staff plus dual pistol Daredevil! It's very Low Intensity - no complex rotation, which could be a plus or minus depending on your preference. It's fast-paced, particularly with the Haste utility skill. In their face style play with the staff and dodges for days. My go-to alt when I just want to chill and have fun.

You should try out the charr personal story, lots of very cool paths you can take, especially if you start with the Blood Legion
