Gujarat Special Khatta Vada | ઘાર વડા - રાંધણ છઠ્ઠ સ્પેશ્યલ
Ingredients:
Dry Atta
1 Cup - Rice
1/2 Cup - Chana Dal
1/2 Cup - Urad Dal
1 tsp,- Methi Dana
1/4 Cup - Poha
1 Cup - Curd or Butter Milk
1 tbsp - Ginger Chilli Paste
1/2 tsp - Turmeric Powder
Salt to taste
1 tsp - Ajwain ( Carom Seeds)
1/2 tsp - Hing
1/4 Cup - Sesame
1 tbsp - Sugar
1/2 Cup - Coriander Leaves Chopped
1/2 tsp - Baking Soda
1 tsp - Water
2 tbsp - Peanut Oil
Method :
Take Kadhai, Switch On the Flame and Add Rice,Urad Dal,Methi Dana , Roast 5 to 7 min in Slow Flame then add Poha ,Roast little and Switch off the Flame and Let Cool Completely then Grind above Coarsely
Take a Bowl and add Curd , Mix Properly
And Close the Lid and Keep for 6-7 Hours
Add Ginger Chilli Paste, Turmeric Powder Salt,Ajwain,Hing,Sesame,Sugar , Mix Properly then add Coriander Leaves Chopped, Mix Properly
Add Baking Soda, Water, Mix Properly and then add Little Hot oil and Mix Properly
Give Rest for 5 Min
Chutney
Ingredients:
1 Buch - Coriander Leaves
15-20 no - Mint Leaves
1 no - Lemon Juice
8-9 no - Spicy Green Chillies
1 no - Less Spicy Chilli
2 inch - Ginger
7-8 no - Garlic
1 tbsp - Sugar
Salt to taste
4 no - Ice Cube
1 tbsp - Besan Sev
1 tsp - Cumin
1/2 tsp - Black Salt
Method:
Take above ingredients of Chutney and Grind .Make a Chutney
Keep a Round thing down or Rolling Pin and Above Keep Wet Cloth , keep above Mixture Small Balls , Keep Hand Wet and Spread or Push above and Make a Flat Vada ,
Fry above Vada in Hot oil and Make Golden and Crispy Vada
