Since the chicken was cold, when it got dropped into the fryer, it caused a violent reaction which often times causes an oil fire which then is what ignited the rest. At the start it sounds like gus turns on a burner of a sort but doesn't let it ignite which then releases gas

When you drop a frozen chicken or turkey into boiling oil, the ice vaporizes and spews oil particles into the air, which then ignite. This caused a lot of Thanksgiving fires in the past.
