LEMON LOAF:
1 3/4 cup gluten-free flour, sifted
1 1/2 tsp baking powder
1/4 tsp baking soda
1/3 cup cashew yogurt
1/3 cup oat milk
3 tbsp lemon juice
1/4 tsp fine sea salt
3 lemons, zested
1 cup cane sugar
3 eggs
2/3 cup olive oil
2-3 tbsp chia seeds
GLAZE:
2 tbsp lemon juice
3/4 cup powdered sugar, sifted

How would it be different if you soaked the chia in milk or water until it was hydrated, then added to mix? Can you hydrate them in lemon juice? Looks like I'm going to be playing with chia all day. 🤭

I love the idea of this recipe. But…am I just missing the measurement for vanilla? The recipe doesn’t have it listed. The video shows her putting it in the mixing bowl.

I am very interested in trying this recipe. It sounds delicious. I have two questions. Can I use Greek yogurt instead of cashew yogurt? I haven’t found cashew yogurt at any of my local grocers. Secondly, we drink 30 calorie, unsweetened almond milk. Will that work or do I need to use a full fat version of almond milk? With grocery prices increasing, I need to know these answers so I don’t make a bread that won’t bake well. Thank you so much!

All that sugar is not gut healthy or healthy period and God only knows what all those ingredients that people aren't used to eating will do for them .lol Having said that you do have my mouth watering for some cake and ice cream.

Thought the same, "gut healthy" yet after we zest pour in a shit-ton of sugar. That ruins all of the benefits.

Gluten-free is no "healthier" than wheat flour unless one is coeliac.

Or people with autoimmune disorders...they can't digest flour or fruktose ...it can make you feel very ill and cause a flare-up
