It’s not Christmas in Guyana or a Guyanese home without Guyanese black (Rum) cake. They bake it themselves or buy it from the baker. Here in North America, you can get it from any west Indian store or bakery; with or without RUM.
Black(Rum) Cake Recipe
½ tsp nutmeg
½ tsp cinnamon
½ tsp all spice
1 tbsp vanilla extract
½ orange rind
1 pound flour
1 pound butter
(softened to room temperature)
1 ounce baking powder
12 eggs
3 pounds of ground fruit
(soaked in wine)
Rum to taste
Browning as required (until desired colour is achieved)
