I so so much love loved Gwyneth on the show with Mario Battelly “On The Road Again”. Her Spanish was perfection. And, when they visited Cuenca, Spain where the best garlic is grown - for me it was magical. This frittata which by the way I have prepare several times n add cheese is a crowd pleaser.

there's a way to do this in one pan: caramelize onions. to same pan, add potatoes & a little water. cook on low with lid on until tatoes soften. to same pan, add spinach & beaten eggs. bake. serve with crumbled feta.
