The dough and bean paste are made by veteran chefs from early in the morning, and the grilled gyoza is made to order, with the skin rolled out, the bean paste wrapped, and baked. It is a pleasure to watch multiple craftsmen working together to make gyoza, as if on stage in front of you.
Setsuko is 78 years old and has been making rice balls for the past 61 years since the establishment of the restaurant.
