आज मसाला किचन मे बन रही है सर्दियों की खास मटर की कचौड़ी की आसान रेसिपी | घर मे हलवाई जैसी खस्ता कचौड़ी बनाने का आसान तरीका | बाजार जैसी कचौड़ी कैसे बनाये मसाला किचन की कचौड़ी/मटर की कचोरी/मसाला पूरी/स्टफ्ड कचोरी/पनीर कचोरी/आलू कचोरी/हरी चटनी/पुदीना चटनी/धनिया चटनी/टमाटर चटनी/चटपटी चटनी का मज़ा लीजिये इस खस्ता बाजरे की कचौड़ी के साथ | क्रिस्पी नाश्ता/क्रिस्पी कचौड़ी बनाने की विधि | बारिश में हलवाई जैसी कचौड़ी बनाये और मसाला किचन मटर कचौड़ी रेसिपी शेयर करना न भूले | मसाला किचन | पूनम देवनानी रेसिपी
INGREDIENTS:
For Paste:
* Ghee(घी) - 1/2 Spoon
* Peas(मटर) - 1 Bowl
* Coriander Leaves(धनिया पत्ती) - Some
* Ginger(अदरक) - Some
* Green Chilli(हरी मिर्च) - Some
For Filling:
* Ghee/Oil(घी/तेल) - 1 Spoon
* Cumin Seeds(जीरा) - 1/2 Tsp
* Asafoetida/Hing Powder(हींग) - 2 Pinch
* Coriander Powder(धनिया पाउडर) - 1 Spoon
* Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
* Crushed Red Chili(कुटी हुई लाल मिर्च) - 1/2 Spoon
* Turmeric Powder(हल्दी पाउडर) - Some
* Dried Mango Powder(अमचूर पाउडर) - 1 Spoon
* Roasted Cumin Powder(भुना जीरा पाउडर) - 1/2 Spoon
* Garam Masala(गरम मसाला) - 1/2 Spoon
* Black Salt(काला नमक) - Less than 1/2 Spoon
* Fennel Seeds Powder(सौंफ पाउडर) - 1 Spoon
* Salt(नमक) - As per taste
* Gram Flour(बेसन) - 2 Spoon
* Water(पानी) - Some
* Sugar(चीनी) - 1/2 Spoon
For Dough:
* White Flour/Maida(मैदा) - 2 Cup/Bowl
* Salt(नमक) - As per taste
* Refined Oil/Ghee(रिफाइंड तेल/घी) - 1/4 Cup/Bowl
* Water(पानी) - As required
* Oil(तेल) - For Frying
RECIPE:
In a mixer jar, put Coriander Leaves, Ginger & Green Chilli. Grind it and make a fine paste and take it out in a bowl. Keep the pan for heating, put Ghee & some Peas & roast them on a medium flame and coarsely grind it. In the same pan, add some Ghee, some Cumin Seeds, Asafoetida/Hing Powder, Coriander Powder, Kashmiri Red Chilli Powder, Red Chili Powder, Turmeric Powder, Dried Mango Powder, Roasted Cumin Powder, Garam Masala, Black Salt, Fennel Seeds, Salt to taste and roast it well. Then Add Gram Flour to it and roast it well for 3-4 minutes on a slow flame. Then add Green Paste, roasted & grounded Peas, some Sugar. Mix them all & keep the filling for cooling down. Then make balls of filling.
For the dough, in a bowl, White Flour/Maida, Salt, some Oil & Mix it well. Add Water gradually & bind the dough with light hands. Apply some Oil on it, cover it, and keep it for rest. Make the Kachoris as shown in the video by filling them. Then fry them in the medium heated Oil.
Serve the Crispy Matar Kachoris with Sweet Chutney & Green Chutney.
Tip: You can add or skip any ingredient accordingly.
