The best Hainanese Chicken Rice recipe you can find! This chicken rice dish is a very well known in Singapore and even Malaysia. Serve Hainanese Chicken Rice with homemade chilli sauce and soy sauce.
A plate of Hainanese chicken rice is easy to prepare. Get to know the right techniques to prepare moist chicken with soft golden yellow skin, well flavoured chicken rice and most importantly, the chicken rice sauces. Accompanying the dish are different sauces like soy sauce and [chili sauce](/recipes/chinese-chilli-garlic-sauce~ByZzdvowz5Z7). These contribute to the special flavour for which chicken rice is well known. The combination of refreshing cucumber slices, the tender chicken and aromatic rice teaming up with the chili and soy sauce makes every mouthful a delight.
Secrets to moist and tender chicken
Along with the supple skin which has a hint of golden yellowness to it, the perfect Hainanese chicken has to be moist in the inside. Hence, cooking the chicken according to the recommended time is important. The cooking process needs to be stopped immediately by transfering the chicken from the boiling pot of water to an ice bath. This is also create the delicious skin we all love with Hainanese chicken.
How to add colour to Hainanese chicken?
The combination of salt and sesame oil helps to add colour to Hainanese chicken. The mixture should be applied once chicken is removed from ice bath. Some stall vendors would mix turmeric powder and warm water to pour over the chicken before the ice bath. This also adds colour to the skin.
Is there a non-alcoholic substitute for Shaoxing wine?
No. Shaoxing wine is added for its sweetness. While most would advise some apple juice as substitute, I highly advise against it. Apple juice will spoil the taste of the dish, making it slightly tart in taste. If you do not want to have alcohol in this recipe, simply omit it as the main flavour in the gravy comes from the soy sauce and chicken broth. A teaspoon of oyster sauce can be added to better the flavours of the sauce.
Chicken rice soup
The soup is one of the key side dishes to a complete Hainanese chicken rice meal. To enhance the sweetness of the soup, you may add radish or carrots, or both. A dash of white pepper would make a whole lot of difference to the taste. Cook this awesome dish for your family and friends. They will appreciate your effort and be impressed.
Hainanese chicken rice for 2
If you are only cooking for one or two people, use chicken thighs instead of a whole chicken. Stuff the ginger and scallions between two chicken thighs and secure them with strings. Continue with the same cooking steps as below.

I happily lived in Penang from 1988-1990 and have missed the food--the best in the world-- ever since: especially laksa lemak, Hainanese chicken rice, Hokkien prawn mee, roti chenai, and kankung belancan. Here In my small Southern Oregon town, I could only dream of these dishes. Until your u-tubes popped up on my computer screen, it never occurred to me I could prepare them myself. THANK YOU, THANK YOU! Can't wait to start cooking. Pandan leaf and Vietnamese coriander aren't available, but I'll make do. (If only I could get hold of a fresh Malaysian durian, my bliss would be complete....)

Great version of Hainanese Chicken Rice. There is another sauce that is common in Singapore, Hong Kong. it utilizes finely minced green onions (Scallions) and finely minced ginger, a little salt, and then add heated vegetable oil or sesame oil and serve it to spoon on the chicken. I like that sauce very much. Thank you for this video.

Nothing like a good Hainanese Chicken Rice! Well done! Apart from the chili sauce, I like to make a ginger/garlic/spring onion sauce. Just heat up vegetable oil to smoking point, switch off the heat and dump in minced ginger, garlic and spring onions. The residual heat will cook the ingredients. Let it cool and add salt and a dash of sesame oil to taste.

I always wondered how Chinese street markets got boiled chicken so tender and saw a video about using ice to cool it down fast for this dish. this is one of the few which uses ice and I will try it soon. thanks for this tip

I prefer garlic over the garam soya sauce chilli shown in preparation. The addition of the process for making garlic chilli would have complemented an already awesome dish perfectly.

Hmmm...cili garam has garlic in it. chicken rice chilli sauce uses a blend of chilli, garlic, bit of ginger, lime juice, salt (these ingredients make cili garam) and chicken broth. How do you make the insides of the chicken stop bleeding the ice cold dump? I recal from my student days when I had to use defrosted chickens for my version of HCR, it was always bleeding because I did not dump it into ice water.

"To prepare soy sauce, mix sugar, Shaoxing wine, sesame oil and 2 tablespoons of chicken stock (from broth) together. As for chili sauce, mix Cili Garam (raw chili sauce) with 1 tablespoon of chicken stock" Could you video this process step of preparing the chilli garlic garam soya sauce w chicken broth. It is to stop the cooking process and that keeps the chicken moist. Do mean the pink juices? The pink juices are from muscle fibres which contain myoglobin. While cooking, the muscle fibres will squeeze the juices out and because it contains iron, it has a pink colour appearance to it. Blood may leak out from the bones of the chicken legs as they are semi-porous containers meant for bone marrow to manufacture blood. During the cooking process, it may release blood just like what happens with the muscle fibres. Check with a thermometer to see if the chicken is cooked well. I sometimes cut through the chicken breast (with a knife) to see if the chicken is cooked.

Hi Gracie, Your videos sure help us overseas S'poreans & Malaysians happy by bringing local cuisines into our homes. Before KZbin videos, I had settled for American cuisine of pizzas, burgers, burritos or American Chinese food. Thks. again. By the way, have you got a yu cha kway or as we call it here, yu tiow at Chinatown stores. There are many KZbin videos on it but many of them are disappointing.

Delicious recipe.. I substitute wine with oyster sauce and it turn out fantastic.. my kids love it and now longer ask for chicken rice from the hawker centre. N ur Chili garam.. is very nice too.. kids love the sambal too!
