Take a look at my third attempt at making bread with my new Hamilton Beach 2lb Digital Bread Maker. In this video I make the 1.5lb basic white loaf.

King Arthur Bread Flour
Vegetable oil

I've been considering getting a bread maker and came across this video. I nevr knew that the diy bread making community was so helpful and supportive! I enjoyed this video and appreciate all the awesome tips in the comments.

You should try using warm water. Slightly warmer than room temp. That helps the yeast active better. If you add cold water, the yeast won't active and you end up with a brick with no fluff to it. You can also warm the oil in the microwave for about 5 to 10 seconds so it won't cool the water. You're one determined fellow!! Gotta admire that!!

I don’t think you using all purpose flour as opposed to bread flour is the problem. I don’t always have bread flour on hand and use all purpose and it turns out great. I think the most important thing is to add the ingredients as listed….very crucial !! Your loaf looks wonderful!!

Hi Pete.. haha.. enjoyed your video ! My 2 cents worth .. the whole secret is in that fist mix.. you watch how the combination of ingredients comes together .. If the mixture sticks to the wall of pan , you add flour , 1 TBSP at a time till it leaves the wall; if it forms a baseball that's hard , you add liquid. The feel should be soft so you can still press the dough. I have baked since 2006 , and so have experimented alot . You can change your recipes .. for example, use half milk , half water for liquid, for sweetener , try honey. I never buy bread flour , only regular and my own mix of whole wheat, spelt , all purpose, barley, buckwheat. For yeast , I use the Yeast Instant Dry VacPac 454 g Fleischmann's, and have been using that one box for almost 2 years now and still lots left ( I keep a small amount out and the rest in the freezer) and it only cost me $ 5 for the box so very economical. I remove the paddle after the last mix, and then place dough back in pan to finish baking. Have fun experimenting and all the best from Canada .

Good advice. Also it's helpful to weigh rather than volume measure ingredients. And you may have to add more flour in the initial combination if the humidity is high.

I have the same machine and had two bad loafs right away... the first was due to bad/old yeast... the second I was in a rush and did exactly as you did and scooped the flour. Do not scoop the flour! Use a smaller measuring cup or spoon to fill the larger 1 cup measuring cup... then level off with a knife. The flour shouldn’t be packed, mine appeared fluffy when leveled. Also, add the ingredients in the order listed in the recipe... Once I started doing all this, I’ve had amazing success with the Hamilton Beach bread machine. Remember it’s a 2lb loaf machine, the measurements tend to make more sense when making the larger size.

So glad you got it right ! a real sense of accomplishment , I had a bread machine and found it a pain in the backside , I learned to make a great loaf by hand , Its a Simple ! No Knead) loaf, so simple Your kids can make it ! 2 loaves on the table in 1 1/2 hours no additives or preservatives, just a Great wholemeal loaf !

One thing you should spoon the flour into the measuring cups. When you scoop it, it compacts and you are using a little more flour than what's called for

For your bread to happen, you need to periodically check the dough during kneading - if it needs additional water or flour. If it is crumby, it needs water. If it is moist and sticky, it needs flour. Add a little - one spoon at a time, wait a couple minutes to knead and check again. Cute kids, you must be proud of them!

I just bought one too, it arrived yesterday on Mar 25th. I've baked two rounds so far and it was a ruined mess each time. I am using reg All Purpose flour but I was also using reg yeast. I will have to purchase some Bakers Yeast and hopefully that will work. I like the machine, It's just that I can't get my bread to rise and it's hard as a rock. I think my loaves would make a Great chew toy for a large dog

@@peteysmooth768 I’ve made a bunch of loaves and with the exception of maybe the first one they turned out great! I take special care to keep yeast in a little valley away from the wet ingredients. I’ve progressed to using the dough setting for breadsticks and pizza dough. So easy now! So glad I went with this machine.

I recently purchased this machine and haven't had any trouble with it, but I have also been making bread in a machine for around 20 years (my original 20 year-old machine finally bit the dust this year). I mostly do organic wheats and grain breads, but your loaf came out nice looking!

You have to let the bread cool all the way before cutting. It finishes off while cooling. But it looked great!

I use all-purpose flour only. Turns out great. For a softer and less dense inside, add warm water, sugar and yeast at the same time and let sit for 10 minutes, then add rest of ingredients and bake. Use only 3 cups of flour for the 1.5 lb loaf. 3 and one half makes the bread too dense. The reason the manufacturers say to putt the yeast on top is because they don't want people leaving the mixture with the yeast fermenting too long, 15+ minutes. The yeast starts to mix with the sugar and water as soon as you hit the start button, but while it will make decent bread, the yeast doesn't ferment enough for great bread. I do not know what happened to the first loaf you cooked, how did it taste?

First loaf tasted fine, except the rough top. I think it needed water. I haven't had the problem since the first two loaves!

The instruction manual says to put the wet ingredients first, then the flower then on top of the flower add salt, sugar yeast etc.

You can take the paddle out after the last kneeding phase and it'll bake to shape on both sides :)

I was as happy as you when you took the bread out. I tried my machine yesterday, failure :D the machine did nothing to the ingredients, no kneading but I could hear it working stirring :( I went through many videos and yours I find easy to understand and follow, so try again today :) thanks for sharing your experience

I discovered later on that the paddle is not working at all, I can hear the engine working but the paddle isn't. Me and my husband tried many ways to insert that paddle and we concluded that it's not the right one for this machine. Production mistake, I sent the machine back and waite to get a new one 🙂 thanks again!

That first loaf that was made, that wasn't because it was all purpose flour. That looks like a yeast problem. Until the loaf actually starts cooking in the machine, you can open the top cover, and with a soft spatula, scrape flour off the pan sides, and even occasionally press down and reshape the dough with the same spatula to get it a little bit more even before it starts baking. Or just take the dough out, the 2 pound size, cut it in half, and put it into 2 small loaf pans and put it in the oven for Abt 40 mins or so, in the shape of the loaf will be even more like a traditional loaf. And since this was white bread recipe, It was one of the softest loaves you can make in there. However, when you start making loaves like the French style, the outside process becomes even harder. It becomes nearly impossible to cut a slice off with a knife starting from the top and going through the bottom, where the crust is too super hard to go through, and it starts becoming a chore & breaking. What to do is lay the loaf on its side, then cut the loaf on a cutting board from the top (which is of course now the side of a loaf). Then you won't have that problem of when you slice a piece off and halfway down the bread starts flopping over and breaking before you finish slicing that one slice. If you turn it on its side and cut starting from the side, there is less height and less chance of the bread breaking in the middle of the slice. Also, that nasty hole on the bottom that the bread machines make is proving to be a pain in the butt for me. The best slices are in the middle, and when you try to cut a slice with a big gash on the bottom, it starts breaking up and no one wants it for a sandwich. It's much better to let the machine do all the work just by making a great dough, then taking it out and putting it in a loaf pan or two (the Internet has the proper sizes for how many pound loaves), then let the dough rise inside those loaf pans as the second proofing, and when it's done, you just takeoff the plastic wrap and slip them in the oven. You'll also get a better browning in your own oven then in this machine, which was a big disappointment to me because it's way too light, and you can control it better in a regular oven. And you can also get a variety of pans anywhere where you can take the dough and make small loaves, one big one, a Pullman loaf, A few rolls, hotdogs/hamburger buns, the latter items being made just a piece of parchment paper on a baking sheet. You can even make the French bread recipe and get a pan online that you could put a long French bread or baguette on, and shape the dough into a traditional bread like that instead of everything being the shape of the pan that comes with the machine, which is odd and forever with that hole in the bottom problem.

as for the bottom hole problem, when the dough just begins to cook I take the dough out and remove the paddle. Then I put the dough back in and let it cook. You will still get a small round hole in the bread, but that's way better than having to dig out your paddle from inside the bread after cooking it

Hope mine comes out as good as yours did. BTW, don't cut hit bread and maybe let it cool just a little before taking it out. Did you share with the little one? 😊

its pretty simple as long as you follow the simple steps.. # 1 always check temperature of water as it can kill the yeast, # olive oil is much better ! and no sugar! but honey is much better and healthier :) I made many videos on this and how to remove the pedal as many people has issue to remove.. just soak it in warm water

Olive oil can leave a specific taste to your bread. Most bakers will tell you not to use it because of that. Preference I guess,

I think you might get better results if you hydrate the yeast first with small amount of water and then after several minutes mix it with the rest of your water and sugar and let it rest for awhile. Basically you are trying to activate the yeast first so you can get a healthy rise in your bread. When you add the sugar water you are giving your yeast food to eat. It is through this process the yeast can make carbon dioxide which makes the air bubbles in the bread. If you use old yeast it may not work and you get a flat bread. By using these steps you can visually see the yeast working before you add it to the mix and that will ensure your bread rises like it should.

I ha e this exact machine and i really like it. Tips: -use exact measurements…. It’s sensitive. -use real butter Use LIGHT crust setting -fresh ingredients Thats my experience anyway

Stay away from rapid rise yeast, stick with dry active yeast. Some yeast that states bread machine yeast is rapid rise but many companies make both. Rapid rise yeast will work ok on the rapid quick setting but not as good on the regular settings. Dry active yeast just works better on regular cycles hands down.

I know some people don't like to add sugar in your bread but people need to understand that in order for the yeast to do it's job and make bread rise you need to feed that yeast and that can come from many types of sugar including honey, plain white sugar or syrup.

Nice video. Your new loaf turned out great. I just got the same machine and made the first loaf today. I followed the instructions exactly, for a 1.5 pound loaf with medium crust. But the loaf turned out kind of in between your failed loaf and your new good one. It seemed to raise pretty well, but the top had a weird shape similar to your first one, and the crust was quite thick and hard. The inside is quite good and soft though, and the flavor is fine. We are thinking maybe we should try using butter instead of oil next time, and maybe a bit more water than the recipe says. Anyone have any suggestions? Thanks!

I’ve also used butter. Make sure it is soft. I agree about adding a little more water. I have had success since this video with both butter and oil. I think the taste is better with butter! Also note what type of flour you are using as it seems to make a difference!

The recipes need to be good, if the recipe is not right, it wont get the best result. This video recipe should be alright to get this result. Butter gives good taste and oil hold the shape better. Bread flour or strong flour makes taller bread and all purpose flour make tastier bread. I've learned these from many making trial and error.

@@theweatherisaokay4964 I have in the last year made dozens of loaves with this machine and found that the main issue was that it needs enough water to become a well-formed ball of dough while mixing. For some reason, the water volume listed in the recipe is insufficient, so I had to be flexible. Now I follow the recipe closely, and then check the dough while mixing the first 5 minutes. I then add 1/4 to 1/2 cup more water on the powdery corners of the pan, and help it a bit with a spatula on the sides. It now always produces a nice perfect loaf for me!

@@kandkpop Yea, my recipe in my machine manual book also the same, the water ratio always not quite correct, after many trials and mixed and match and only can get the right portions of ingredients. I learned the hard way that the freshness and the volume of the yeast is very important too. Love your finished loaf. It's looking perfect.

My first two loaves looked like the bad example you showed. I hope my third attempt is as perfect as yours. Did the paddle bake into your bread? Mine did both times. This time I will make the little hole for the yeast. I didn’t see that in the instructions. Wish me luck.

When it comes to baking specially breads it's best to swich your measurements to by weights grams it gives more accurate and way easier to weigh everything by scale also less mess and faster .... if you can't convert the measurements to grams then look for the same recipe in grams on the enternet.... in other hand water vs flour ratio would change depends on the altitud.. so you have to adjust the recipe in high altitude and high humidity.

Super late to post a comment but maybe it can help someone. Weigh your flour always instead of volume. You can have luck sometimes (or if sifted most every time) but why bother... get a scale and weigh flour. Bread flour is 120g. Everything else I use volume and it turns out fine every time. Making bread by hand a time or two will teach you how a proper dough looks and feels after a proper water and flour are used.

Bread now comes out perfect every time! I prefer to make the dough in the machine and then bake it in the oven. So good!

Use warm water for the yeast, and why are u adding everything as The ingredients are listed that’s not how you follow the directions the list of ingredients is just the things that you need underneath it will explain all the steps

I just bought my machine and after reading the instructions was told to run the machine for 10 minutes with nothing in it before I made a loaf of bread. I tried and tried to find the timer that would let me set the time for 10 minutes and no such luck. Any advice?

I don't know I did the 2 lb using regular all-purpose flour, follow the directions of course using the knife method for the accurate measurements. mine came out exactly like yours maybe a little bit bigger and a little bit darker cuz I did medium so you don't have to use bread maker flour. But I realize the 2 lb makes the slices really long. I think the 1.5 lb is better more like a regular slice of bread. Bread makers are cool but who thought of this? This is not what a loaf of bread looks like LOL!! If you take a 1.5 lb loaf of bread from the store it is very long and a 1.5 lb of loaf from the bread maker is very short and the slices are longer.. You have less slices but their more dense and they weigh more. So in essence they tell you it's a lot cheaper to make your own bread but you're getting a lot less slices even though it weighs more. Very bizarre LOL

Thanks for the info! The shape is definitely different than your store bought loaf. I may try to use all purpose next loaf.

@@peteysmooth768 Definitely more healthier eating homemade bread because there's no preservatives that your body can't digest that automatically turns to fat.. I guess from what I read when you use bread flour because it has more gluten in other words more protein. The bread will be more airy, chewy bread.. they say that all purpose flour won't rise as much. But that wasn't the case with mine and a lot of other people that use all purpose flour.. I guess you try it both ways and see which way you like it. My bread didn't come out crummy.. the inside was a little bit chewy which was nice and the outside was crisp like Italian bread. So I would say overall with all purpose flour it came out kind of like Italian bread. But just like you I'm going to try bread flour next to see how that tastes. Who thought making bread would be so much fun and guys would like to do it LOL ;)

@@peteysmooth768 Oh and one more thing I don't know if this makes a difference I used extra virgin olive oil. I did not use the vegetable oil I think as they recommended. a lot of people say extra virgin olive oil is more healthier for you and it gives you more like a nuttier taste. I don't know if that has any bearing on why it came out perfect or not.

They say not to scoop because it can pack more in than needed. Always better to weigh it. But having said that, I hate that machine. My bread sucks

Yes you need to measure correctly. Aerate the flour first by stirring it around in the container, and then spoon the flour into the measuring cup & then level the top.

I am following everything what you said… But some reasons???? Not doing good. Bread flour is studying in the corner. 3cups of Bread flour is too much???? What did I do wrong??????

I’ve tried whole wheat bread recipe to the T. But the end product loaf never came out looking anywhere close to yours or as published in the cookbook. It tastes great but look wise :-( disappointed. If I take the bread out right before the baking process and put it in a loaf pan and bake in oven it comes out fine but if I leave it in the bread maker it looks a meteorite with rocky surface.

Yes, I failed on my first two attempts. I shared a picture of my failed loaf in this video. I think that I had not measured the water correctly and I think I used poor quality flour when I failed.

Use avocado oil not vegetable oil. Vegetable oil is actually the worst. Also use bread machine yeast not rapid rise.

You should spoon your flour into the measuring cup. Too much flour in there

I always scoop the flour but I always shake and turn side to side the container to air it a little before I scoop.

Warning to all bread maker users! While kneading the dough, these machines will MOVE! I had one fall off my counter after 2.5 hours!!!! If you can, put it in a DRY sink or place a something in front of the machine which will fall to the floor as an alarm to you.

@@peteysmooth768 i like using butter and I’ve used stick butter and the butter comes in the tubs. I prefer using stick butter because, for me, the guide on the paper makes it easier to measure
