The meal in the video is basically hotpot or shabu shabu. It is essentially blanching varieties of veggies and meat of your choice in the flavored broth. Most people would have dipping sauce on the side as well. For me when I make hotpot at home I would choose simple things such as my favorite vegetables enoki mushrooms, nappa cabbage (bok choy, spinach, beef brisket thinly sliced (freeze for 1 hour and then slice), broth flavor would be tum yum, dipping sauce would just be hoisin sauce with a dash of sirracha.

There hotpot soup base packets you can buy that are more tasty. Make the soup base your own and add things you like.
